I'm three months in Phase 4 now, and would have to say that I don't crave carbs. During this time, I've had 1 slice of pizza, 2 pieces of cake (my mom's birthday), fewer than a dozen rolls, no cookies, no ice cream, no desserts, no beer, no margaritas (haven't tried the low carb one yet, Rocky!), no pastries, no candy... the list goes on. These have been accessible to me--it's not that I avoid looking at them when shopping or stay away from offerings at work. And I don't mind if people around me are having these things.
On the other hand, I eat kale chips several times a week, enjoy a Luna bar when I want something sweet, supplement my protein intake with vanilla, mocha and chocolate RTDs, and consume a cocktail or glass of wine pretty much whenever I wish. I had an omelet packet last week on my recovery Monday--the first in a very long time--and I thought it was great... but that was always my favorite. I read labels at the store, and make choices on that basis rather than being enticed by how something looks or smells, or what memory I might have of eating it in the past.
I am eating healthier than I have in a long time, and enjoy lots of proteins I always have... salmon, scallops, veggie burgers, eggs. I've backed off the cheese quite a bit. That was a staple for me, often with a baguette and glass of wine. I eat more fruit and have spent more time at the local farmer's market than I have in years. And when I throw together a pasta dinner as I do a few times a week, I grate some cheese on top, but not a ton of cheese. And if I have bread, I opt for a plain roll rather than garlic bread.
So yes, I would say that things have changed. I was sure I'd have ordered a pizza by now, but I haven't. Go figure...
