I'm making a green bean, white bean, tomato and Ricotta Salada salad (you can also use Feta), and some sort of chicken. DH is doing either Quorn patties or Shrimp.
This post came at a terrific time! I was really trying to figure out what to eat!


Let's just say there will be several days of lean protein, lots of veggies, and water to recover. Mom loved her dinner so it was totally worth it
