LOL that was my bad, I missed that it was a pound...but it'd be easy to bump that up to a pound and a half of meat - if you divided 3 ways that would be exactly 8oz per serving. I would totally make the meat sauce ahead of time and then just portion it out and freeze what I wasn't going to use immediately!
