I had a terrible but delicious lunch of fried chicken gizzards but I had a fantastic dinner. I had some veggie tacos that totally wowed me and that is saying a lot. We sauteed some carrot strips, onions and mushrooms in olive oil. I put that on corn tortillas with guacamole cream (avocado, lowfat sour cream, garlic, lime juice and Louisiana hot sauce and salt) along with that salsa, lettuce tomato, small amount of refried beans and cheese. Did not miss the meat at all and it has held me for over four hours now and I am not slightly hungry. It really made me feel good to get back on track.
We haven't left town but we have been out and about while on vacation. We even accomplished a few chores.
Some goals that I am working toward are: less artificial sweetners and foods with additives. Not there all the way but I am drinking my iced tea plain now. Not gonna give up my sweet coffee milk so I'll probably switch to sugar but not yet. I have to get the calories down in other areas first. I'm hoping eating fresher will help my metabolism. Plus I just think it is healthier. Once vacation is over I plan on getting back to my walking also. It really made me feel better about myself even though I didn't lose any weight.
Toni..so glad your brother is healing so quickly. I pray he continues to do well. WTG staying away from the late night snacking. I'm with you on this heat..yuck.
Solly..praying that everything falls into place and the neck surgery doesn't interfere with the sleep test. I'm curious, when you get the neck fixed will it change your results since it is in the wrong position now? Your time away sounded wonderful. How is that precious grand baby of yours? Remind me how old please.
