Ok, I am late late late on this, but here are some holiday recipes I had on my computer. Most are from here...

No Sugar Pecan Pie
3 eggs
2/3 C. Splenda
1 C. sugar free syrup (Agave)
1/3 C. butter, melted
1 C. pecan halves (lightly toasted)

Preheat oven to 350 degrees

Mix the eggs with the sugar. Stir in the syrup and the melted butter. Stir in the pecan halves.
Pour in pie plate. Bake for 25 min. with the edges covered with foil. Remove foil and bake
another 25 min. or until you can insert a knife and have it come out clean.

Sugar-Free Holiday Nog

7 cups skim milk, divided
1 pkg. (1 ounce) instant sugar-free vanilla pudding mix
1-2 tsp. vanilla or rum extract
Sugar substitute equivalent to 4-8 tsp. sugar
1 cup evaporated skim milk

Combine 2 cups milk, pudding mix vanilla & sugar substitute in a bowl; mix according to pudding
directions. Pour into a 1/2 gallon container with tight fitting lid. Add 3 cups milk; shake well.
Add evaporated milk; shake well. Add remaining milk; shake well. Chill. Yield 8 servings.
Exchanges: 1 Skim Milk, 1/4 starch
Serving Size: 1 cup: Calories 114, Sodium 296 mg., Cholesterol 6 mg., Carbohydrate 18gm., Fat
1gm., fiber 0gm

Eggless Eggnog (sugar free)
3 cups cream
3 cups water
1/3 cup sugar substitute
1 teaspoon vanilla
2 teaspoon rum flavoring
1 package sugar-free instant vanilla pudding dash of nutmeg Place all ingredients in blender and
blend until well combined. Chill.


Apple Cobbler

2 c. Oat Flour
2/3 c.butter flavor Crisco for crust
8-10 Granny Smith Apples, peeled, cored & pared
1/2 c. Sugar Twin mixed with 1 t. Cinnamon
2-4 T. Butter, sliced thinly

Mix flour and Crisco as you would for a pie crust, mixing thoroughly. Press 1/2 into 8x8
baking dish for crust. Keep other half for top. Peel and cut up apples and place into crust,
sprinkling with Sugar Twin/cinnamon mixture and dotting with thin slices of butter at each
layer. Keep layering until baking dish is full. Pat out remaining crust mixture and place
over apples. Bake at 350 degrees about 1-1/2 hours, or until browned. Delicious by itself,
or topped with sugarfree ice cream.


Sweet Potato Bread
1 cup butter, softened
1 3/4 cups Sweetener (I use part Splenda & part Fructose)
4 eggs
2 1/2 cups cooked, mashed sweet potatoes
1 cup Oat flour
2 cups Whole Wheat Pastry Flour
2 teaspoons. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1 tsp. vanilla
1/2 cup flaked unsweetened coconut
1-2 cup walnuts or pecans, chopped

Cream butter, gradually adding Sweetener._
Add the eggs one at a time beating after each one._
Add sweet potatoes and stir to combine._
Combine flour, baking powder, soda, cinnamon, nutmeg and salt._ Gradually add to sweet potato
mixture beating after each addition._ Batter will be stiff._ Stir in vanilla, coconut and nuts._
Pour batter into a well greased tube pan and bake at 350 for 1 hour or until it tests done with
toothpick._ Cool in pan for 15 minutes, remove from pan and let cool completely on a wire rack._
note: This can also be baked in two loaf pans but I would check after 35 minutes and continue to
bake until the loaves test done.


SPICY PUMPKIN PECAN PIES


2 Unbaked 9" Pie Shells (See pecan crust below)

1 Tsp melted butter
1 Cup shelled pecans (I only sprinkled these on top)
1 Can Pumpkin (Libby 1 lb - 13 oz.) (3-1/2 cups)
1 Cup Powdered Coffee Creamer (Nature's SF Creamer)
6 Eggs
1-1/2 Cups Brown Sugar Twin
1/2 Cup Agave Syrup
1 Tsp Salt
2 Tsp Cinnamon
1 Tsp Nutmeg
1/4 Tsp Ginger
1/4 Tsp Ground Cloves
2 Cups Boiling water


Preheat oven to 350 degrees F. Brush bottoms of pie shells with melted butter. Reserve 1/2 cup
of pecan halves for top garnish on pies. Chop remaining 1/2 cup of pecans; sprinkle over bottoms
of pie shells.
In large bowl combine pumpkin, creamer, eggs, brown sugar, karo syrup, salt and spices.Beat with
rotary beater until well blended. Blend in water, mix well. Pour into the two pie shells.

Bake 55 to 60 minutes or until a knife inserted near the center comes out clean. Garnish top with
reserved pecan halves, forming a circle on the pies about 1-1/2 inches in from the rim. Cool
before slicing. Each pie makes 6 servings.

This is the pie crust I used for the spicy pumpkin pie recipe above and it worked just fine and
is also awesome-Denise

Pecan Pie Crust

2 cups of ground pecan halves
2 tablespoons of butter or margarine
1/4 teaspoon of salt
(I would add a little Splenda)

* Grind nuts.
* Mix with butter or margarine and salt.
* Spread in the bottom of a pie pan or spring form pan. * Bake for 10 minutes at 350 degrees.
Serving Suggestions: This is a great crust for a cheesecake or other pie. It adds a great flavor.
Save some pecan halves to decorate the top of your pie or cheese cake.

I have turkey in a brine and pumpkin pie in the oven! It feels like Thanksgiving! I made pasta for dinner tonight, that's about as far from turkey as you can get. We will get up tomorrow morning, get the turkey in the oven and watch the parade. We will go to MIL for lunch and to my sister's for leftovers late afternoon.

GOOD EVENING EVERY BUDDY!!

Not going to believe this one...trying to be a good neighbor this morning (in the dark) I went over in the next driveway to put their paper at the door, forgot about a dip they had in the concret, and down my big arse went! I've reinjured my knee, not broken, but it hurts like ****! Went to the DOC to pic up my note to go back to work and he said he didn't know if he was going to let me go. He will re-evaluate next week!

Just wanted to drop in an let y'all know I'm still kicking!

Happy Thanksgiving!

We finished dinner about two hours ago. Tom and I just got in from a walk. It is lovely out! I really did well at dinner. I ate what was on the table...just was careful about portions. I had some of everything. I was kind of worried, but just checked my blood sugar levels and they were really good, so I must have done ok. My older daughter and her husband, the chef, just left. He was going to fry up some green tomatoes I still had from the garden. He got them all cut up, and in some milk or cream or something, then never finished them. You would not believe the mess I have to clean up. Sheesh. Next holiday, I am using paper plates and plastic utensils!

Furthermore, I purchased a turkey breast like I served at the church on Sunday evening to have today. It was not as good as the ones I had Sunday...and the smell about gagged me. I am sure it was ok, but I just HATE turkey, so I was very disappointed that it was not as good. I feel like I wasted $18 on it. The ham, on the other hand, was delicious! Tom made the customary gallon of gravy, and they ate at least 3/4 of it with the approximately seven pounds of mashed potatoes that got eaten.

I don't think I will be hungry until sometime Saturday...haha!

We just got through with dinner. It was so YUMMY!! I didn't fix a lot of stuff that wouldn't be eaten. Turkey thighs, white sweet potatoes, brussel sprouts, dressing, gravy, yeast rolls, cranberry sauce and pumpkin pie. No room for pie, so we'll have that tomorrow.
I'm getting ready to climb up in the bed...three of my shows are on tonight, the rest are repeats because of Thanksgiving.

MONET...Sounds like a busy day over at your house today. Sorry about your turkey...glad the ham was good though.

MONET...Thow throw "them mators" down this way, I'll fry them, up...
I'd kill for some good ole home grown green mators!!! They are $4.99 per lb down here. I don't know what they do with them around here, but I doubt it's frying them up like we do!

Good morning! I slept poorly, but seem to be ok this morning. Kaeleb woke early, and his slacker parents are still sleeping, so he is hanging out with me. I got James to transfer my photos finally, so here are a few recent pictures of him. The cutest one was not in focus, dang it! But these show his infinite cuteness pretty well. The close up of him smiling was taken by my son, James, and he had the color saturation turned down unfortunately, but it is a great pic anyway! The other is obviously his Halloween costume...he was a Jack-o-lantern.

Hope everyone is doing well!

GOOD GLOOMY SUNDAY AFTERNOON ALL YOU BUSTERS!!





It's gonna let loose here at some point...no sun, dark clouds...It matches my mood....Something woke me up around 3 a.m. and I was up until just after 7:30 a.m. Went to sleep and got up at 1:30p.m.

Had every intention of getting all the laundry caught up, but that didn't happen! Just can't get going...still sitting here in my gown, TIPPY is snoring under the covers on the bed, KATE is watching football (big surprise!), and I am caught up in a movie!

I've got to call the DOC tomorrow and get another X-ray of my knee. I swear, I was all set to go back to work and then this happens! I think I have another month's worth of time left in my bank if I have to take more time off. I wish THE COMMUNITY CLINIC (at the hosiptal) would call me and offer me the job I bid on...I'd snap it up in a heart beat!!


WHAT A DAY FOR FOOTBALL YESTERDAY WAS!!!

MONET....CONGRATS ON THEM DAWGS!!!

JACK....THE KITTY'S WOULD HAVE WON IF IT HADN'T BEEN FOR THAT DELAY OF GAME!!! GOOD GAME!!! WELL PLAYED!!!

TONI...I know what you mean about the eating....I'm going to round off the Holiday WEEKEND but fixing breakfast for supper....SAUSAGE, GRAVY, BISCUITS, and maybe an EGG or TWO!!!!

I dont know if this is where I can post this but I posted it else where and got no response.

After sort of lurking these boards for the past week just reading about Sugar Busters I have a few questions. Is this the same as the Low GI plan that I saw being discusses in another section?

Also,
I'm italian. My blood runs marinara sauce LOL. But my question is, about pasta. Are you allowed like whole wheat pasta or multigrain pasta? I've had them and enjoy them and would replace my normal pasta with it permanently if its allowed.

SILLY: This is where most of the Sugarbusters gather...though it is slow on the weekends. Welcome! SB is a low GI plan, based on the Montignac plan by Michel Montignac. It is similar to other low GI plans, but I think it lays things out in a way that is much simpler and easier to follow. On the pasta, yes, whole wheat or multigrain pastas are ok. Even 100% durum wheat semolina pasta is ok. It should not be overcooked, but be al dente, and don't over do it on the portions. I hope you stick around and let us get to know you, and you us. This is a great group! We have a few big losers on here, and a few who have been on here for over five years. If you have any questions, please ask away! We always say the only stupid question is one you don't ask!
