Just back from my WI. Happy to report that I have lost 1.6 lbs. this week. Little by little I am getting back to where I was a few months ago. Hopefully I can keep this up. The whole grains I've been eating have really been satisfying me and that has really helped me stay OP despite extreme stresses in my life.

Ahhh, I have a bit of a summer cold. I question being at work when I have sick leave as opposed to vacation.

Melissa- I have a short haircut and its starting to shag up a bit. I have been monitoring Tokyo temps and the less hair I have the better.

I found a non-WW recipe for cornmeal cake with strawberries I may make for company on Friday. I may try making it more points friendly, it looks really good.

Anybody have any interesting plans for the summer? We were discussing summer travel last night and we are realizing weekends are starting to fill up. Yikes. DP has a nice 3.5 week cruise right after labor day and so that makes our summer plans even more constricted.

Here's the recipe lala and anyone else who's interested. It's long, but doesn't appear to be too complicated.

Chocolate Silk Pie
Crust:
1 (10-inch) piecrust or 1/2 (15-ounce) pkg refrigerated pie dough (such as Pillsbury)

Filling:
1/2 c. sugar
1/2 c. unsweetened cocoa
1/3 c. all-purpose flour
1/4 tsp. salt
1 3/4 c. 2% reduced-fat milk
4 ounces semisweet chocolate, chopped

Meringue:
5 large egg whites
1/4 tsp. salt
1 1/4 c. sugar
2/3 c. water
grated chocolate (optional)

1. Prepare and bake piecrust in a 10-inch deep-dish pie plate. Cool completely on a wire rack.

2. To prepare filling, combine 1/2 cup sugar, cocoa, flour and 1/4 tsp. salt in a medium saucepan; stir with a whisk. Gradually stir in milk. Bring to a boil over medium heat, stirring constantly. Reduce heat; cook 2 minutes or until thick and bubbly, stirring constantly.

3. Remove from heat; add chopped chocolate, stirring until chocolate melts. Spoon chocolate mixture into a bowl; place bowl in a large ice-filled bowl for 10 minutes or until chocolate mixture comes to room temperature, stirring occasionally. Remove bowl from ice.

4. To prepare meringue, place egg whites and 1/4 tsp. salt in a large bowl; beat with a mixer at high speed until soft peaks form. Combine 1 1/4 cups sugar and water in a saucepan, bring to a boil. Cook, without stirring, until candy thermometer registers 238 degrees. Pour hot sugar syrup in a thin stream over egg whites, beating at a high speed until stiff peaks form. Fold 2 cups meringue into chocolate mixture.

5. Spread chocolate mixture into prepared crust. Spread remaining meringue over chocolate mixture. Chill 8 hours; garnish with grated chocolate, if desired. Yield: 10 servings (serving size: 1 wedge)

Whew - long recipe. Don't know how this one will compare with your French Silk Pie kt. Will you be doing a comparison test?

Melissa and lala: We're on the same haircut schedule. Had mine lopped off on Saturday; it's always a shock the first week - it's like I have little or no hair left at all. To hear DH tell it, I'm practically bald. (I had hair halfway to my waist when we met - the good old days for him).

Here's my French Silk Pie recipe that I've eaten for decades. It isn't a cooked filling. It has eggs in the filling - I've NEVER had any salmonella problems with eating anything with raw eggs, but I thought I'd warn you just the same.

French Silk Pie (this is NOT WW friendly)

1 cooled, baked 8 or 9 inch pie shell
1/2 cup (1 stick) butter (no substitutes)
3/4 cup granulated sugar
1 tsp vanilla
1 square (1 oz) unsweetened chocolate
2 large eggs

Cream butter & sugar together. Melt chocolate & add to creamed mixture. Add vanilla. Add eggs, one at a time, and beat at medium-high speed about 5 minutes per egg. Pour into cooled, baked pie shell and refrigerate until firm (at least several hours). You can add cool whip or whipped cream as a topping, but I think it's so rich that I don't even bother.

Blueberries are just now coming in and, surprisingly, they are plump and sweet.

Seasaw & Lala: Haven't gotten my appointment yet...I've been on the fence. I talked to a couple of people I work with to see where they get their hair cut at and I need to make another call this morning. My hair was shoulder length when DH and I got married and that's the longest it's ever been. I've grown it out several times but I find that I'm more of a short hair person. Anyway, I just need to get my butt in gear and get an appointment. The temps are starting to climb and I know that my hair will be an issue

Have to share with everyone that when I went to my meeting yesterday I was down 2#!!! I am very pleased with that--I'm only 2# from my personal goal. I would love to break the 137 by my birthday but I don't know how reasonable that is. I'd be happy just to lose a little bit.

The pie recipes sound wonderful! I enjoy cooking/baking so I may just have to make them! As for strawberries, I'm not sure what the going rate is here; I'm pretty fortunate to have 3 rows of strawberries growing in my backyard so I get them fresh from the garden. I love eating them when they're still warm from the sun.

beeeeuuuuuutiful here today. I am so sorry that I am only now experiencing a congested head and not achy. I could have stayed home and convalesced. Oh well.

melissa- I say do what you feel comfortable with as regards to your hair, if you are going to be hot this summer, get it cut and styled in a way that will be easy to care for. I am jealous about your strawberries. The squirrels eat the ones at home and the ones at the community garden are not bearing well. I have some fraises de bois (alpine strawberries) that I am trying this year too.

So, hitting the new farmer's market on the way home from work. We are having guests tomorrow, so I'm looking for food to prepare. Other than that, nothing interesting going on other than work, weed, clean and work out. Boring life.

Hi everyone!

We're experiencing the 3 H's here--Hazy, Hot & Humid! Ugh! It was a balmy 76 this morning and we're supposed to climb to the upper 80's. I dont' mind warm but the humidity is miserable. We go from one extreme to the other.

Update on my hair: I have an appointment over my lunch hour today to get my mop trimmed. I asked a few people that I work with about who their hairdresser was and there's a guy really close to my office so I took the plunge and got an appointment. I'm looking forward to it. I'll post an update later on.

Nothing glamourous to report here. It is beautiful outside and we are inside. Need I say more?

Good luck on the hair Melissa. My DP just had hers lopped off, it looks pretty good. Mine goes in for a tune up tomorrow and I am anxious to get a little shear.

Nothing else happening. We're going to see the cowboy junkies tomorrow night at a winery and we have guests for dinner. I have to work this weekend to finish up stuff and get ready for Japan.

I hope everyone else has a more exciting weekend in store!

Okay...I got my hair cut and I like it This new guy is good and I'm happy with how he styled my hair. He cut my layers up shorter and gave me a style that's pretty quick and easy. Now if I can do this at home. I got quite a few compliments when I came back to work so that's a good sign.

I'm working at WW on Saturday morning from 7:15 until about Noon but other than that not much going on. It's been a nut house at work getting ready for our first orientation session. I'll be so glad to have this one under our belt. We've had lots of people signing up late and changes. Lots of details! Anyway, have a great weekend everyone!

Well, Thin4Lifers, today is my WI after my second week of maintenance, but I feel fat today. I went to a party last night. I had saved up points, but I know I ate more. I stayed away from the dessert table though, which was an accomplishment.
