Turn on your oven to 350F.
Cut bell pepper (red and orange look good in the pan, but green are usually cheapest), Onion, zucchini, and asparagus (or pick one, two, three...whatever you think you might like) into bite sized pieces (slice the zucchini).
put all the pieces in an oven safe pan.
Drizzle with a little bit of olive oil.
Toss it all around to coat each piece a little, adding more as necessary. You don't want it running, just making them shiny.
Then add flavors you like. I usually use a lot of garlic powder, some lemon pepper, and a little bit of salt. Sometimes I add basil too.
Put it in your oven. Cook it as long as necessary to make it as soft as you would like. You might want to stir it once or twice, just to keep the tops from browning too much. I LOVE this!

Again, use the internet to look up recipes. One site I use a lot is allrecipes.com. I think Cooking Light has a site too. Even here at 3FC there are lots of recipe ideas. You can add different flavors to different veggies, depending on your taste. Brussel sprouts are a tough one to experiment with, I think. Others are right too...you don't have to eat the veggies by themselves. Mix them in with other things (soup style, casserole style, etc.)

Don't be afraid to experiment. You never know what combination may strike a chord with your taste buds. Good luck!!
lol thank you! I will try this. I normaly use butter in a skillet to cook zuccini. but im guess thats not the best thing lol. Im going to try baking veggies now

Carbs (and sugar) are more addicting than most illegal drugs

If you cut them out, you will go through heck of a withdrawl; but it will be well worth it. You will start enjoying fruits and veggies, natures goodies.

eating right and healthy is not easy but if you are determined you will end up feeling fab at the end.

I just take the ground chicken 50:50 to finely chopped veggies/shredded veggies, mix in some seasonings - salt, two tablespoons of parmesan cheese - two egg whites then form into little nugget shapes and dredge in whole wheat bread crumbs. I bake them, then freeze them on a cookie sheet, take off the sheet and keep in a baggie in my freezer so they're convenient.

Yep, processed food is essentially boxed/frozen/canned prepared food, so the more you can make from scratch the better for your body. We have an entire section dedicated to "whole foods" and at the top there is even a sticky on "What Are Whole Foods."

This sounds GREAT! I want to make these for my daughter instead of just buying the frozen nuggies.

There has been some great advice on this thread. I'll just simply point out that while controlling calories is easier when eating certain foods it ultimately comes down to calories.

Thus, while you're figuring out exactly how to make "healthy" food more appealing for your long term success just recognize that you can eat all junk food so long as the calories are where they need to be and you'll lose weight. Example - google "twinkie diet"

Yeah I am a little crazy that way, but really it is good! I use garlic salt and pepper..some red pepper flakes with it to make it even better. Cottage cheese is low calorie and high protien (for a cheese)...so it makes a good combo!

Empty calories are like regular pop, chips, candy bars, twinkies, anything called "junk food". It just means there is no nutrients, and only calories...or the calories outweigh the nutrients as far as health benifits go.

When I am short on time or for the sake of convienence I buy the mixed couliflower, broccoli, and carrot mix. You can use any vegetable you like, even add some bell peppers for flavor...or get creative. See what you like I think cottage cheese would go well with any veggie! (maybe not cucumbers, gross!)
