  • Quote: One of my very favorite veggie recipes is this:

Turn on your oven to 350F.
Cut bell pepper (red and orange look good in the pan, but green are usually cheapest), Onion, zucchini, and asparagus (or pick one, two, three...whatever you think you might like) into bite sized pieces (slice the zucchini).
put all the pieces in an oven safe pan.
Drizzle with a little bit of olive oil.
Toss it all around to coat each piece a little, adding more as necessary. You don't want it running, just making them shiny.
Then add flavors you like. I usually use a lot of garlic powder, some lemon pepper, and a little bit of salt. Sometimes I add basil too.
Put it in your oven. Cook it as long as necessary to make it as soft as you would like. You might want to stir it once or twice, just to keep the tops from browning too much. I LOVE this!

Again, use the internet to look up recipes. One site I use a lot is allrecipes.com. I think Cooking Light has a site too. Even here at 3FC there are lots of recipe ideas. You can add different flavors to different veggies, depending on your taste. Brussel sprouts are a tough one to experiment with, I think. Others are right too...you don't have to eat the veggies by themselves. Mix them in with other things (soup style, casserole style, etc.)

Don't be afraid to experiment. You never know what combination may strike a chord with your taste buds. Good luck!!
lol thank you! I will try this. I normaly use butter in a skillet to cook zuccini. but im guess thats not the best thing lol. Im going to try baking veggies now
  • Quote: No special equipment required - just your vegetables, a little olive oil, fresh cracked salt and pepper, mix until all veggies are coated and put on a baking sheet (I mix mine on the sheet itself). Bake at high heat 450 for 12-20 minutes, check for the texture you want.
    makes me hungry!! LOL
  • my shoes have been hurting my feet also. I bought some sketchers tone ups bc I needed bigger shoes and they were only $30. maybe im just not use to them yet. but my feet feel like they go numb after 10 mins. my hubby said it's bad circulation and it will get better. i dunno tho
  • Carbs (and sugar) are more addicting than most illegal drugs

If you cut them out, you will go through heck of a withdrawl; but it will be well worth it. You will start enjoying fruits and veggies, natures goodies.

eating right and healthy is not easy but if you are determined you will end up feeling fab at the end.
  • Quote: These are wonderfull ideas!! never thought of them. I had no idea you can make your own nuggies!! do you just bake them afterwards?? I saw a recipe that used chopped califlower as "rice" thought it looked neat.
I just take the ground chicken 50:50 to finely chopped veggies/shredded veggies, mix in some seasonings - salt, two tablespoons of parmesan cheese - two egg whites then form into little nugget shapes and dredge in whole wheat bread crumbs. I bake them, then freeze them on a cookie sheet, take off the sheet and keep in a baggie in my freezer so they're convenient.
  • Quote: This might sound stupid but what excatly is processed food? is it like boxed/frozen food?? lol
Yep, processed food is essentially boxed/frozen/canned prepared food, so the more you can make from scratch the better for your body. We have an entire section dedicated to "whole foods" and at the top there is even a sticky on "What Are Whole Foods."

its going to be hard. I'm slowing getting off them. but if I use wohle wheat that will be ok right?

This sounds GREAT! I want to make these for my daughter instead of just buying the frozen nuggies.
  • There has been some great advice on this thread. I'll just simply point out that while controlling calories is easier when eating certain foods it ultimately comes down to calories.

Thus, while you're figuring out exactly how to make "healthy" food more appealing for your long term success just recognize that you can eat all junk food so long as the calories are where they need to be and you'll loose weight. Example - google "twinkie diet"

    HAHA!
  • Quote: You mix your vegges in cottage cheese??? I heard of fruit but not veggies lol. I might have to get one of those no calorie butter sprays you mentiond. what are empty calories excalty??
Yeah I am a little crazy that way, but really it is good! I use garlic salt and pepper..some red pepper flakes with it to make it even better. Cottage cheese is low calorie and high protien (for a cheese)...so it makes a good combo!

Empty calories are like regular pop, chips, candy bars, twinkies, anything called "junk food". It just means there is no nutrients, and only calories...or the calories outweigh the nutrients as far as health benifits go.

oh wow thanks for the info! what veggies do you put in it?

When I am short on time or for the sake of convienence I buy the mixed couliflower, broccoli, and carrot mix. You can use any vegetable you like, even add some bell peppers for flavor...or get creative. See what you like I think cottage cheese would go well with any veggie! (maybe not cucumbers, gross!)
