i used to use mashed cauliflower for mashed potato sub. only I added cream cheese and cheddar cheese. it was pretty good

oooh! i love cauliflower! i'll definitely have to try this one. i have some in my fridge as we speak that i was planning on roasting (which is also delicious, with just extra virgin olive oil, salt and pepper).

If you steam it with chicken broth, instead of water, it is much richer tasting!
