Hello ladies - well the trip to see my husband was great. We did a lot of walking, went to Mt. Vernon and a couple malls. Of course I overate a little but don't feel too much of a change.

I skipped weigh in this week but will be going on Saturday so I have 4 days to push myself. I got my Slim in Six videos in the mail when I was gone so I'll be popping them in the DVD twice a day for the next few days, not to mention I'm going to Orlando next Friday with 6 of my girlfriends.....
Here's the receipe for the eggplant casserole if anyone wanted it:
Cheesy Eggplant Bake
1 eggplant
5-6 large mushrooms
1/2 onion
1 green bell pepper
1 can of diced tomatoes
1 can of tomato sauce(I used Hunt's)
1 tub of fat free ricotta cheese
2 cups of fat free shredded mozzerella
2 tbsp of garlic(I like lots of garlic)
1 tsp of oregano
1 tsp of basil
1 tsp of thyme
1 tsp of parsley
1 tsp of crushed red pepper flakes
Peel eggplant and cut into twelve slices. Put on a cookie sheet and spray with pam(olive oil flavored). Broil for 2 minutes. Flip over and sprinkle with a little parmesan cheese. Broil for two more minutes.
In a saute pan, saute bell pepper,shrooms,onion and garlic. Next add tomatoes and tomato sauce and spices. Simmer for about 5 minutes.
In a casserole dish layer six slices of eggplant. Then top with ricotta, then sauce mixture, then remaining eggplant. Top with cheese. Cover dish with foil and bake at 375 for 30 minutes.
