The medical community now knows that dietary cholesterol doesn't contribute to serum cholesterol. The low carb diet actually does more to support cholesterol, normalize LDL:HDL ratios, and lower triglycerides.
Eggs (and saturated fat in maintenance) are things we don't have to fear, as once thought. Another thing to keep close eye on, however, is Omega 6 fats from vegetable oils. These cause an inflammatory response in the body (as do too many processed grains). And the medical community has found a much more clear heart disease correlation with inflammatory markers than with cholesterol.
RE: eating 8oz or even 6 oz meat.
When I started IP, a dinner portion was 6-7 oz. If you need to split your dinner portion into two four oz portions, go ahead. Just know this doesn't cut back on the amount of packets you have daily. But there are certainly packets that are less filling than others.
