Vegetable Salad Mold-Phase II

  • Seems like I do my best thinking while soaking in the tub. Thought I had some recipes that would be good in Phase 1 but I wasn't sure if there was a no sugar lemon jello. Hooray, there is. Here is a great salad. Mix and match veggies as you will.


    2 pkg lemon gelatin, sugar free
    2 cups boiling water
    2 cups cold water
    1 tablespoon plain gelatin
    1/4 cup cold water
    1 cup well drained, tomato pieces
    1/2 cup green pepper, diced
    1/2 cup thinly sliced cucumber
    1//4 cup thin radish slices
    1/4 cup chopped green onion
    1/2 cup shredded carrots
    3/4 cups shredded cabbage
    1 1/2 teaspoons salt
    3 tablespoons cider vinegar

    Combine lemon gelatin with boiling water, add cold water. Let plain gelatin stand in 1/4 cup water about 5 minutes. Add to hot lemon mixture and refrigerate until consistency of unbeaten egg whites. Combine vegetables, vinegar and salt and let stand while gelatin is congealing. When gelatin mixture is ready add the mixed marinated vegetables and fold over and over until evenly distributed. Pour into well oiled mold or bow. Let refrigerate at least 5 hours until firm. Unmold and enjoy!
