I grow swiss chard in my garden and I think it tastes like a mild version of spinach. My SO doesn't like spinach, but he will eat swiss chard so I use it as a substitute for spinach. I use it in omelets, soups, casseroles, stir frys, and with pasta. I also saute it with white beans, garlic, onion, and vinegar.
I love kale which is only a recent discovery for me (past couple years). I cut it up, sautee it in lemon juice, garlic and olive oil until it is limp. I really do like it.
I used to HATE spinach because of how my mom would serve it. She would serve it out of cans in which it was basically a soggy mush of green. I hated the smell and refused to eat it. Later on, I discovered that spinach is good raw and that it is pretty decent when it is sauteed.

I grow this too, and agree it's much like spinach. I also freeze it but I cut out the ribs first as I find them nasty when frozen. We eat a lot of greens in our house, alone or in soups or pasta dishes.
