My apologies Baffled. I neglected to put the link in. Now that I recall, there was some kind of issue with it Monday morning. Here it is. Again, my apologies.
You'll need a packet of Knorr Vegetable Soup mix and about 2 cups of sweetpotato mush.
I make the soup mix according to the packet instructions and microwave the sweetpotato until it's mushy.
Leave the soup on low and put small amounts of the sp into a food processor thinning it with the soup. When it's smooth, put it into the soup pot and do a little more sp.
I love it!
I did all this on Sunday morning, threw it in the crockpot and served it to friends after church. A double batch fed nine (with bread and cheese) and it went over very well.
I like sweet potatos. I usually boil or bake them, occasionally roast. I need to try the fries. The only way I've tried that I didn't like them was in a soup recipe I got somewhere on here. It was a corn and SP chowder. Not awful, but certainly not something I'd make again.
There's a recipe on Cooking Light for an African Peanut butter, chicken and sweet potato soup. I've made it twice now (and have beefed up the veggies) and it's super yummy. It's my turn to make lunch soup this week; I might make it again.
Sweet potatoes of my youth were ALWAYS served baked, covered in marshmallows. Even though I loved marshmallows, I HATED sweet potatoes. Didn't like being at the table when they were served.
But, when I started my journey, I tried them again - baked plain then served with lime juice. WONDERFUL.
Been eating them for two years now. Love them grilled as mentioned above, or sweet potato fries.

BillBlueEyes, I'm just like you. We always had canned sweet potatoes covered in marshmallows for Thanksgiving & Christmas. I thought I didn't like them, but it turns out I just didn't like the canned, candied type. I ate the marshmallows though! I now love them baked, roasted alone or with other autumn veggies, as sweet potato fries, sweet potato soup....yum!
My sis & I always argued over the candied sweet potatoes. I would let her put nuts in, even though I would eat them. Now that we've figured out as adults that we both love non-candied sp's, we've asked our parents to change the holiday menu to include roasted sp's instead of the candied ones. I can't wait 'til Christmas when my sis and I can enjoy them together (sadly I can't join my family for Thanksgiving).
They're low fat but they are highish in calories for a veggie--much like a potato. They are packed with nutrients and things the body loves though, so they're a wise use of calories.
I make a sort of southwesty dinner: 1/2 a baked a sweet potato, 1/2 cup black beans, 1/2 cup corn, 1/2 cup low fat cottage cheese (or 1 oz low fat cheddar), and a whole bunch of hot sauce. It sounds weird, but it's tasty and filling and comes in at about 400 cals.
