Default Vitamin K

According to fitday I hardly get any vitamin k on most days. Usually about once or twice a week I eat a bag of pre-washed spinach which provides me with over 1000% of my recommended amount of vitamin k for the day, so my weekly average looks fine.

My question is: since vitamin k is a fat soluble vitamin (meaning I don't pee it out everyday) is it okay if I only get it once or twice a week?

It is my understanding that fat soluble vitamins are stored by the body until needed. So if you are okay over the course of the week, then I don't see a problem.
