You take your zucchini and twist it through and it comes out in spaghetti shaped strands. I blanched it in boiling water briefly then put it in a baking dish. I topped it with ground turkey cooked with green pepper and seasonings then crushed up some tomatoes to put over and shredded some parmesan and asiago cheese and popped it in the oven til it got hot and bubbly. The whole family loved it! It was very good and just like a spaghetti consistency. Might sound dumb but when you are tired of eating things (veggies) simply sliced this made for a great alternative to change up the shape and texture. I have an alfredo sauce made out of greek yogurt and I think it would be great over the zucchini with some grilled chicken.
That sounds GREAT! I make "lasagna" using zucchini slices instead of noodles, which is delish. But, this is definitely going to be happening soon!
I've not been to weigh-in this week, but I'm hoping to make it in this evening. Unfortunately, it's "that time", so I'm fairly certain I'll show a small gain or stay the same. But, I'm still plugging away. I think I've got 8 weeks left. Ten pounds in 8 weeks seems do-able, even though it sure is tougher to lose at this point in the game. I'm losing Middle School Fat now!!!
