I have found a wonderful alternative to my much missed breakfast burritos.. Its not really a buritto but is so satisfying!!!
I take 1 egg 1 oz of pepperjack cheese and a 1/4 c of the fat free salsa or jallapeno lime flavored refried beans.. SOOO YUMMY!

Smile Breakfast

Since I work full time and on the go all the time I needed something easy.

I plan for a week:
7 eggs
14 oz of cheddar cheese
mushrooms
bell peppers
tomatoes

I'm on the beige plan, so I scamble all that up and cook it in a small cake pan on 350 for around 30 minutes.

Then I cut it into 7 equal portions.

Cottage cheese with pinneapple supplement and a splash of water - stir & enjoy!

Cottage cheese with 1/4 cup of cooked oatmeal, 1-2pkts of splenda and a bunch of cinnamon - microwaver 1:45, gives you a gooey bowl of "oatmeal" feel. (I cook up the oatmeal in advance & just keep the container in the fridge).

These are my quick on the go breakfast staples.

Default Mock Snickerdoodles

I got this recipe from the MRC recipe thread. I tried it this morning and it was really good. I used the chocolate pudding supplement. It is a nice change of pace from the "normal" breakfasts.

Mock Snickerdoodles

1 egg, beaten
1/4 c. uncooked oatmeal
1 packet splenda
1 pudding supplement (vanilla or chocolate)
1/2 tsp. cinnamon

Mix all ingredients together, drop by spoonfuls onto a cookie sheet, and bake at 350 for 8-10 minutes.

They end up puffy, so they're more like oatmeal puffs.

Prep time: 3 minutes
Bake time: 10 minutes
Makes about 5 cookies

Enjoy!
