Spinach-Beef Spaghetti Pie

  • Spinach-Beef Spaghetti Pie

    6 oz whole wheat or durum semolina angel hair or thin pasta
    2 eggs, slightly beaten
    1/3 cup parmesan cheese
    1 lb ground beef or turkey
    1/2 cup chopped onion
    1/4 cup chopped bell pepper
    I also added garlic
    1 jar (14 oz) of your favorite SF spaghetti sauce
    1 tsp creole seasoning (optional)
    3/4 tsp garlic powder
    1/2 tsp dried basil
    1/2 tsp dried oregano
    1 pkg (8 oz) cream cheese, softened (I used lite)
    1 pkg (10 oz) frozen chopped spinach, thawed & squeezed dry (could also use fresh)
    1/2 cup shredded mozzarella cheese

    Cook pasta accoding to pkg directions. Add eggs and parmesan cheese. Press onto the bottom and up the sides of a greased 9-inch deep-dish pie plate/cake pan. Bake at 350 for 10 minutes.

    Meanwhile, in a skillet, cook the meat, onions, bell peppers and garlic over medium heat until the meat is no longer pink; drain. Stir in spaghetti sauce and seasonings. Bring to a boil. Reduce heat, cover and simmer for 10 minutes.

    When pie crust is done, top with layer of cream cheese, and layer of spinach. Then top with spaghetti mixture and sprinkle on the cheese. Bake at 350 for 20-30 minutes. Let sit for a few minutes to set up.

    Enjoy. Makes 6-8 servings. My kids even loved this (they are 7 & 2).
