Happy Monday everyone! I cheated a bit this weekend but was not too bad.
Today:
Breakfast: 1/2 avocado spread on cheese crisp
Lunch: pork chop with saurkraut and sour cream (mmmmmm), one green pepper, 1/2 red pepper
Dinner: probably will be a cheeseburger and side salad with blue cheese dressing.
I went to the gym both days this weekend!!! Since last Tuesday I have been every day! Tuesday was cardio, Wednesday weights, Thursday cardio, Friday wieghts, Saturday and Sunday cardio. Today I'll go for my wieghtlifting session - aiming to do it 3x this week, plus at least 3 days of cardio.
Stuck to plan yesterday and worked out with weights. Today is a day off the gym.

Dinner: chicken sausage and some form of vegetable (maybe broccoli)
Robin, I have tried several ways to make the cheese crisp. It is a fine art to make a good one I think! Follow these directions exactly.
First, take a pyrex pie plate and spray with Pam. Then take several slices of white American cheese and lay them out on the plate, slightly overlapping each other, to cover the bottom of the plate. (I find that the best cheese to use is the least expensive cheese from the deli counter. The more expensive cheeses don't melt as well for this purpose. Low fat cheese from the deli counter works well too. Pre-packaged cheese doesn't work for me.)
Sprinkle red pepper flakes or garlic powder for additional flavor if you wish. Then put in the microwave for about 5-6 minutes (that is how long mine takes, you will have to monitor yours the first time) Until the cheese makes a brown pancake type thing. Remove from pie plate with a spatula trying to keep it all in one piece and cool on a paper towel. When cool, it should be hard like a cracker. It stores well in the fridge so you can make a lot ahead of time. It is great for snacks b/c you can use it like a cracker!
I've also heard of putting tablespoons of grated parmesan on a cookie sheet and baking them, but I've never tried it (think I might though b/c it sounds so good.)
Well since I'm on the West coast my times are way off. I'm going to start posting here and just post the day befores so I have a complere day. Yesterday I had:
7 strips of bacon
3oz of pork sausage
4 scrambed eggs
1 boiled egg
3 cups shredded lettuce
1.5 oz hard cheese
1oz hamburger
.25 cups of sour cream
6 oz boneless skinless grilled chickenbreast
Still not feeling good, but I will make an honest effort to eat properly today
Yesterday was a meatball, and a couple teaspoons of egg salad
Today, I'll have some broccoli curry soup (should clear out the sinus') Depending on how that sits, I'll have a couple meatballs for supper with a small ceasar salad.
No walking, and no weights, I just dont have the strength....may even go back to bed in a few
I ended up having my soup for lunch, and 2 meatballs and a bit of left over steak for supper.
Lots of tea today, and hubby took me to the mall so that I could stretch my legs abit and get out of the house. Now Im tired lol I think I over did it.
