I went to the pool this morning for the third time this week. Finally starting to feel the real benefits of Atkins (more energy, less draggy). Morning blood glucose into the safe zone for the first time in MONTHS before breakfast so that was a real good start to the day.
Later I had my computer/bookkeeping guru here to help me with my year end (home business) and installing accounting program update. I'm so pathetic that I can't do these things myself. Anyhow, that took a couple of hours which left me with a headache. I fell asleep watching Y&R at 3 so feel better now.
About pork rinds, TAZ , they are not greasy at all. They are pork rinds that have been fried at such a high temp that all the fat has been cooked right out of them and all that is left is the very high protein connective tissues, cooked to a crisp and salted. Here they are called Pork Puffs in the potato chip aisle. They come in several flavors but I find plain, salted are the most useful. How can you use them? Well, I've already posted my recipe for mock French toast which is really yummy. Then you can crush them and use them as breading for chicken strips, tenderized steak and pork cutlets. I have even made a low carb muffin substituting the pork rind crumbs for flour. You can also use them as a replacement for potato chips to dip into creamy/cheesy dips, or as croutons in salads and soups. They are truly a "good thing".
