  • Well, lunch time is here--2 hotdogs for me--yum yum! 4 carbs--not bad!!

    Does anyone on the Atkins have any NEW suggestions for brekkie?? Eggs are getting pretty lame--even with the 600 different ways to cook em--another Q--is there a such thing as eating to MANY eggs on this Atkins thing??--I have eggs for brekki--sometimes egg salad for luch--hard boiled egg--I thing I'm in egg @##$!!!

  • Home a little early, and DH went to the library. Ahhh...the house to myself for a while.

    Missedbeinghere you can eat anything for breakfast you like! I never get sick of eggs, or just add some ham or sausage or salsa and cheese or veggies(spinach and feta cheese omelettes!YUM).

    But anything is fair game. I do think it's a good idea not to skip breakfast, and to make sure you are getting a good dose of protein in the morning. But leftover dinners, chicken, ham, rolled up meat, tuna salad, whatever...I can't face salad, but that's about the only thing I haven't eaten for breakfast!

    Today I was really good, no cheats, and I'll be in bed early, for an early day tomorrw. And I'm doiing a training tomorrow, and rarely eat much on those days. So I hope to go into the weekend in good shape, and maybe will see a loss by Monday!

    Off to see about some supper, leftover chicken dipped into blue cheese dressing, with carrot and celery sticks, then SF jello if I want a snack.

  • Hi there girlies!!!

    First chance to get in here, busy at work, kids are nutty, I am just plain tired...you can tell the holidays are over no more peace on earth good will stuff around anymore!!!!



    Tommorrow I go in late..and stay til 9pm, I am actually glad so I can miss the dinner, bath rush stuff for a change, mean mommy I am.

  • Didn't I post my Mock French Toast recipe somewhere in the recipe section? I can't find it now and I don't remember the exact measurements but it's very simple.
    You take half a bag of crunchy pork rinds and crush them in a plastic bag (I use a rolling pin)
    Put these crumbs in a bowl and add two eggs and some cream and let it soak until gloppy like pancake batter. Add 1/2 tsp vanilla, a dash of Splenda, 1/2 tsp baking powder and a sprinkle of cinnamon. Ladle out onto a medium hot greased griddle like pancakes. Cook like pancakes and serve with butter and low carb syrup or, if you're allowed them, some fresh berries. Very yummy and you'd never believe that it's pork rinds. Trust me.
