Paprika Chicken Wrap
Serves 2
2 6oz chicken breast
Olive Oil
2 tsp SMOKED paprika (available in gourmet shops and delis)
2 handfuls of arugula
2 ripe tomatoes sliced into wedges
Juice of 1 lemon
4 LoCarb tortillas
2 T hummus (optional)
2 T LF or FF sour cream
Heat a grill or skillet until very hot. Meanwhile, rub chicken with oil. Sprinkle on paprika and season with Mortons Lite Salt and pepper. Place on gril or in skillet and cook until done. Set aside.
Mix arugula with tomatoes, dress with juice and oil. Wipe pan clean, add tortillas and heat on both sides - DON'T let them get crispy! Slice chicken, serve on tortillas with salad, hummus and sour cream.
The smoked paprika gives this dish the BAM! Can be made with sirloin steak also.
