I make potato hash for breakfast -- roasted potatoes and other roasted or sauteed vegetables, all mixed together and sauteed, then topped with a bit of cheese and pepper. Kind of like hash browns but with lots of other interesting veggies.
I also find that a baked potato works pretty well as a breakfast food, even topped with broccoli and/or salsa. I don't know quite why that one dish works for me when I'm more of a traditional breakfast food person, too, but it seems to fit for me.
