Ok never mind! I did it! I stewed the chicken all by myself and I made the Chicken salad and it was delish! I had it in half a pita! Yum! Thank you soo much for the idea! Next will have to be the pizza! Thanks again Amy M.

Cecilia- I am so glad you liked the chicken salad and you did well with the "stewing" see you are a cook after all.. Start out small and then move to the more complicated recipes. I have a new low fat desert that I am working on, i will share the recipe once I actually make it. that way I can get the measurements right. The chicken pizza is really good I tried a new variation on the BBQ the other night. I took the "stewed chicken" and put it in a bag and put some Fat free italian dressing and mixed it up. I did the pita the same way, except put the italian dressing down, then chicken, then took some 2% mozarella cheese on top, you could add onions or whatever else. It was really good and that taste of italian I was looking for. My next challenge is I am going to figure out how to make a good tomato sauce with fresh veggies to really make modified pizza. I will let you know what I come up with.

Amy- I am so looking forward to the weather warming up and getting outside to walk. I live in a great neighborhood to walk and the great thing about it is the kids can all go with me and get some exercise too. Will be this weekend before we get outside because it is SNOWING is Tennessee can you believe it?

I found this article very interesting about choosing fruit.
Before you pick a watermelon, slap its side. Hear a hollow thump? It's ripe and ready to go.
Blueberries or Rasberries avoid containers where there is juice that is an indication that the berries are over-ripe
keep tomatos and banana's at room temp. if in the fridge they loose flalvor
Mangoes plums peaches stored at room temp. in a brown paper bag will ripen faster

BBQ Pizza! So excited! I making it right now! Amy and Kennedy I just want to say that I really appreciate your new ideas. I have been doing LA for a year and a half and I have never tried either of these recipes and I am so excited for these new options and for your support you gals are doing great! Love this group! Cecilia- I am so glad that you like the BBQ pizza it has been my favorite on plan meal so far and it super easy too. The Italian version is good too, depends on what kind of food you are in the mood for. I will keep posting my recipe finds and it is so important to me to have variety and taste in my life.

Amy- you will love to make your own BBQ pizza as it cuts out all that extra sodium

My tip for the day comes from an email I got.

it was talking about the ever dreadful muffin top it said to stay away fromt he 7 C's and that would help eliminate that roll of fat hanging over your jeans

7 c's are: colas, candy,cakes,cookies,crackers,ice cream and cereal.

Summer Slim down is still in full force. However, I may not meet my Easter goal but I have not weighed yet and will not weigh in until Saturday so I am still holding out some hope. i have meet a mini-goal of exercising 5 days a week. I am looking forward to a beautiful weekend and some spring cleaning and walking. i will try to find a great tip and post it later.
i have been exercising a lot and researching it and I had no idea how many calories you have to burn to loose a pound wow.

Okay so I am here in Georgia with my husband and son. It is so pretty here very different from where I live. Huge house, huge backyard boy I am going to miss it when I leave tomorrow. I didn't get a chance to read all the new posts but I see that everyone has been going back and forth. I did skim through and saw something about BBQ Pizza sounds yummy and is making me hungry already just typing it. So later I must read more to catch up.

As I mentioned in an earlier post I was worried about not having the right foods for my trip from NJ to GA but I managed to bring some with me and of course my brother-in-law had tons of stuff since he is a Vegan. He has introduced me to a whole new world with the whole vegetarian/vegan concept. I looked in his refrigerator and every other word out of my mouth was WOW. He had so many products everything from yogurt to sandwich meat and even shredded cheese. He took me to this Vegetarian market where he buys all his Tofu stuff. My son loved this Carob cookie/brownie thing and the store had all sorts of desserts. So based on all this cool new information I have bought the following:

Vegetarian Nature's Burger - a veggie and whole grain mix
So since I love veggie burgers I thought this might be interesting to try.

Also, he has these things called Chicken Chunks - which tastes really good. I think they are made with soy beans. They look like croutons. I have never heard of them or tried them before until last night. You take these chunks and but them in boiled water. They fluff up and they have the consistency of meat. He added a couple of seasonings including curry and before you know it we had curry chicken. But it wasn't chicken but he tells me they had lots of protein. He also gave me some Vegetarian Stir Fry Strips (Seasoned Wheat Protein) that was pretty good too. He also took us to a farmers market that had every type of meat you could think of. Every type of fish you can think of (swimming in the water ready for you to pick it up with a net), tons of cheap veggies and fruit, fresh baked bread, organic this that and the other thing, whole foods, fresh foods, of my goodness let me stop here because as you can see I was introduced to a whole fascinating world. Well I will chat with each one of you later once I read all the posts. I hope everyone is doing okay.

MommyofSix: Your #7 on your list Be aware of your emotional response. If you eat more than you plan, seeing it as a catastrophe will only set you up for failure. Get back on track at your next meal, and try for extra activity. This was ALWAYS my downfall. If I ever ate off of plan I would beat myself up real bad about it and take myself totally off my diet. So thank you for this tidbit because I need to be reminded every now and then. Also, did you ever get the Weekly Food Planner Template I emailed you? Also your tip about how to pick the watermelon was great. I wished I read it before I went to the Farmer's Market. My husband, his brother, my son and me wanted to buy one but we all looked at each other and said "I don't know how to pick out a ripe one" (ha, ha, -- it was so funny).

"JerseyMAdchen" Are you my next door neighbor? Just joking. When I walk to the park, around the pond and back home it comes out to 2 miles as well. Good Luck on you papers and exam. What are you studying for? I am a chicken I have never ventured out and tried different Lean Cuisine stuff. I always stick the to the same thing. My co-worker however it always eating the Flatbread pizzas and they look good.

Cecil: Cool you are making all this cool stuff. You sound like a natural. I myself can't wait to try either of the recipes. Do you believe that I found my LA Weightloss Cookbook that I never opened up. Please know that I have had this for probably 10 years (ha, ha, ha)

EVERYONE: If anyone wants copies of any of its recipes let me know. I can either scan them in for email or send by snail mail.

Kennedy: You go girl (ha, ha, ha -- sorry I couldn't resist I was giving each person a special comment I felt a little left out LOL

So right now at this point as I sit here typing, my brother-in-law is at work, hubby is on the couch asleep and my son fell asleep in the room. I guess the tiredness kicked in after the long drive. I guess I should be getting some rest as well. My husband is going to make me drive most of the way since I was too tired to help him on the drive down (ha, ha, ha)

I am trying with the cooking thing. It is not a natural thing for me. I hate cooking these two recipes are just so simple I can actally force myself to do it! HA!

Hello Cecil, I live in New Jersey but we went to visit my husband's brother that lives in Georgia. He is the only one here the rest of his family is in NJ, Brooklyn, NY and some is Tennessee.

I was given a real eye opener to someone who is a Vegan. Oh yeah I had something called Tempeh which was real good. Now when I get back to New Jersey I have to look for a place like this. I am not sure if Whole Foods is the same but I sure will investigate it.

Hey guys!

Kennedy- I am finishing up my bachelor's at Rutgers for Human Resource Management.

I bought these small already made pizza crusts at the grocery store that are personal size,and made a mizza tonight. Regular that is... with part skim mozz, onions and turkey pepperoni. For my veggies with it, I made cucmber and onion salad. It's a favorite in my family, my mom made it ALL the time growing up when she made pizza. I am definitely spoiled, I grew up on homemade pizza, dough included!!!

I cut up an orange and added it to some canned pineapple (in it's own juice, no sugar added) and it was really good.

I also buy WW candy and have one piece every once in a while. Just a little treat!

Sounds like everyone is doing well. I love reading the post too, very inspirational. I think the post are what gets me through somedays.

Kennedy- sounds like your have had a wonderful trip. i love Georgia but what can i say i am a southern gal. i am sure you will find a store similar in New Jersey. I am very spolied in that we have fresh farmers markets everywhere and we trade foods.. I have an apple tree, grape vines and tomato plants and trade with local farmers to get all the great produce. Hope you have agood trip home and bravo staying on plan during vacation.

Cecil I am so proud of you for cooking. Most recipies can be simplified. you just have to figure out what works for you. you may turn out to o be a cook after all.

Amy- your dinner sounds wonderful. I am jealous of the homemade pizza. My sister has a recipe for a WW pizza that the crust is low-fat crescent rolls. i will get the recipe and share..

Thanks Amy, Amy and Kennedy I really appreciate your support, I can not say that enough. I agree Amy some days this is what gets me through. Last night I had some Egg salsd after class with whet thins. I love Egg Salad! Especially with a a little red pepper seasoning. YUM! Well I was down another 1 lb today at WI! Yeah! So far so good since this week is also TOM, pretty challneging. But also exciting to know that I can get through this week I can get through all the others too! HA! Hope you all have a great POP day!

Hello and a good day to all of you. I actually got back yesterday and was trying to post something but my computer gave out on me so I had to reboot it plus I was tired from a 13 hour drive I just saved it for today. So here I am nice to be back in NJ.

Cecil: WOW -- look at you and your weight loss that is great :bravo:. Keep up the good work. I myself made a promise that during the challenge I would only weigh myself 3 times when I started the challenge, during the middle and then at the end so my next weigh in will be on 4/22. I am one those people that despite the fact the I have more energy, feel freat or my clothes fit loose I still have to see that scale move. I know it is not realistic way of thinking about weightloss but I am trying to think differently about my weightloss this time and not be so hard on myself.

JerseyMadchen: Congratualtions on working toward your degree. I love the whole HR field I have never worked in it but I always found it so fascinating. Where can a person get WW candy?

Mommyofsix: Wow it sounds like I would have lots of fun if I were to visit you too. I am such a city chic surrounded by miles of concrete and bodegas (corner stores). If someone told me that they would give me a nice flat in NYC - Manhatten and I can have my own parking space I would jump in a flash. I love NYC full of life and types of people.

Well I went to Whole Foods today for the very first time. Boy was it a mad house in there. It was new just opened in Paramus, NJ. A lot of cool stuff I must go back. I wanted to compare it to the store I was in GA but some of the things I was specifically looking for they didn't have. So my search continues.

It is rainy and windy today :rain: Did some driving around. Now I'm back home ready to clean up and jump on my treadmill. Has anyone ever used a trampoline for excercise?:trampo: Talk to you guys soon.

Kennedy- glad you made it back to NJ. You should visit Tennessee it is a beautiful place. i actually live 6 weeks in NYC when i was in college. It was great but made me realize I like open space way to much. Also, great job on staying on plan while on vacation and opening up to Vegan options.

Hope everyone is ready for an on plan week. i know i am. i lost 1.8 pounds this week. I exercised for 6 days straight and took last night off. I hope this week is as productive. I did not meet my easter goal but will continue to stay on plan because that is the only way I can loose.

Tip for the Day- applies to me and thought it was worth sharing
There is nothing more discouraging than stepping on the scale after a week of diligent dieting and grueling workouts and not seeing any drop in the number. The plateau is a common problem among dieters and can typically be waited out, but there are measures you can take to keep your metabolism fired up even as you reduce your caloric intake.
The best way to break a plateau is to keep your salt intake below 2,000 milligrams a day and drink lots of water. Make sure you're not eating any processed carbs, period. That's right — no chips, sugar, white flour, and so on. And hit the gym hard! The boost in exercise will make your body swell and hold fluids for a few days, but after a week you should see the benefits on the scale.

Hey guys!

Kennedy- I get my Weight Watchers (WW) at my grocery store. It used to be with regular candy, but they keep it with the slim fast and other diet items. I can't think of who they're made by, Whitman? The candy company that makes those yellow boxes... anyways, the candy is so good!

I also like Sugar Free hard candies every once in a while. I have a sweet tooth and fight the urge to eat a dessert after every meal!

I have had the candies before and they are very good. Actually in an email I got last week it suggested to eat some candy on easter to help with temptation. i did not eat the candy but I made an ok dessert. I took a small container of low-fat cottage cheese, added a packed of sugar free jello- orange falvored and some fresh pineapple and mandrian oranges(juices drained) put in some cool whip. It was good and no one new it was low-fat. I also deviled my eggs with reduced-fat mayo and lite salt and no one new the difference or at least they did not say if they did.

Hello Ladies! I hope everyone had a lovely weekend. I stayed in my PJ's all day yesterday (Sunday). How refreshing :).

Mommy of Six: Hey Tennessee my family was supposed to go there last year to visit my husband's family. His grandmother, aunts and uncles live there. I hope we get to visit there soon. My son has never met his Great Grandmother before and I think it would be nice. Also you are so creative with your cooking. Would you believe that I used to love cottage cheese when I was really young let's say between 6-9 years old. But, now I can't even swallow one spoonful. I tried to put fruit in it but I still couldn't eat it. Some people at work eat it for lunch with veggies. I was told it contains lot's of protein. I love all other types of cheese though. :T

I think Ricotta cheese can be also used instead of Cottage Cheese.
Does anyone know how do they compare in terms of protein count?

Ladies have anyone of you visited Sparkpeople.com. It is a quite an interesting website. Helps you keep track of your exercise, food intake etc... I went ahead and signed myself up and it is interesting to a breakdown of the different foods I consume. Takes some effort on the person's part to data enter in all the information but it look's like something cool. I will use it for about a month or two to see what the benefits are.

Hi ladies sounds like you had a good weekend. I am just in for some relaxing tonight. I just got home from the gym and walmart. UGH! I went to COD today and I was down 1.4 over the weekend! YEAH!

I used to not even be able to eat a spoonful of cottage cheese either. But some how I did it and now I can eat it with grapes. Try it... maybe it will be ok?

I can not buy the candies or I will eat all of them! HA!

I am already bored with the protein and starch choices available to me on the first 4 weeks. UGH! I made the BBQ pizza the other day and I must have over did it because I couldn't even eat the whole thing. UGH!. I always over eat things and then don't like them... baby carrots... sad. They were so easy. HA!

Good Tuesday to you all..

Sounds like everyone made it though easter without any problems. Cottage Cheese is very good for you and does contain a lot of protein however, just like you both mentioned I can not eat it without adding something to it. My friend at work puts cottage cheese in her baked potato and loves it. i am not eating potatos right now but when I add them back into my diet I might try that.

Although I only lost 1.8 pounds last week. I am now in a smaller size. Which is even better than weight loss to me. I went shopping yesterday to buy some short and went to Old Navy and had to go get a smaller size, which is great. I did not wear shorts at all last summer so it was great to buy them. I wanted to buy a lot more but limited myself in hopes that by June I can buy even a smaller size. i hope so anyway!!!

Cecil- it is discouraging sometimes when your choices are limited. Let me think and I will try to come up with some new recipes for you.

Kennedy- sounds like you had a nice relaxing Easter. I would be much happier everyday if I could just wear my PJ's all day.

easier than it sounds!!!

Chicken Enchilada
· 4 corn tortillas or wheat tortillas have more fiber
· 1 1/2 cups shredded cooked chicken (skinless, white meat) (the stewed chicken)
· 1 cup medium or hot salsa – organic if possible or make fresh salsa_ watch sodium
· 1 cup plain low fat yogurt
· 1/2 cup reduced fat sour cream
· 1/2 cup reduced fat shredded Jack cheese or 2% cheddar
Preparation:
Preheat oven to 350 degrees.
Coat an 8-inch by 8-inch baking dish with nonstick low fat cooking spray. Warm tortillas according to instructions on package.
Add shredded chicken. Mix salsa, yogurt and sour cream and spoon half the salsa mixture into the chicken.
Divide chicken mixture among the tortillas. Carefully roll tortillas and place them seam down in the baking dish. Spoon remaining salsa mixture over the tortillas. Sprinkle cheese on top. Cover with foil and bake for 30 minutes.
Serves 4.
One tortilla is going to be 1 dairy( yogurt and cheese), 1 protein(chicken), 1 starch(tortilla),1 veggie (salsa)and probably 2 condiments( sour cream, and extras from salsa)

you could actually buy one of those already cooked rotissere chickens - however that is added sodium!!!!

I don't think I would have done so well that first week if it wasn't for you Amy! I really appreciate it! That may have to be a weekend recipe because it almost sounds like cheating! HA!

PS I don't know if I mentioned this but I am cutting out drinking alcohol for the 1st 4 weeks as well. Trust me it is harder than it sounds. so far I am on day 8 of no alcohol! YEAH!

Cecil...cutting out drinking alcohol for 4 weeks sounds REALLY hard. Maybe I sound like an alcoholic but I find it hard to go through a weekend without drinking. It's not that I get drunk every weekend or anything but a few beer or a few glasses of wine just is routine for me I guess...lol.
So if you're like me, then I appreciate just how hard it will be!

Yes I am like you Kristen and it is hard. The first time I started LA I went 40 days with no drinking. UGH! It was tough but I think it was part of the reason I was soo successful. So hopefully I can make it the 30 days. So many temptations. HA!

Cecil- you are very sweet. I am trying my best to stay on plan and I love to cook so when I find new and on plan recipes I always try to share them. Like what you said earlier it is so easy to get tired of eating the same thing (baby carrots) over and over again so when you can mix that up it is easier to stay on plan. Amy is right about the hungry girl recipes they are great. some of them are detailed but for the most part easy enough to follow.


Amy- did you get the 200 recipes under 200 calories from hungry Girl? I have seen it advertised and have thought about buying it. Also have you read the Skinny ***** book it is hilarious.

I can also agree with you about not being able to eat just one piece of candy. I could never understand one piece of anything (e.g. what is one potato chip, one cookie, one soda, one bite, one slice of pizza okay someone kick me :kickbutt: thanks I needed that) ha, ha, ha. Cecil do you have the LA Weightloss Cookbook? Do they sell them at the centers anymore? If you need me to copy the book for you just pm me with your email address and I will figure out a way to send it to you. Lot's of cool food ideas/recipes.

Kristinx: Yes I understand it can be a challenge to break away from things. But keep trying.

As for me I am doing okay I celebrated another birthday :woo:yesterday. I got so many cards from the people at work. I went to visit my sister because she was in town fron North Carolina. Then later on in the evening I went with my husband to a restaurant called Bonefish which was absouletely delicious and I finally had my own piece of grilled Mahi Mahi. And of course last but not least I stayed on plan all day. Thank goodness no one bought me a birthday cake (my favorite being Italian Rum Cake) - Yummy

Well I hope all is well with everyone and I will come back to chat soon.

P.S. Just to let you guys know I will starting a training program soon via online. I was trying to not take part of any studying while I was dieting because the potential stress might make me consume foods that are not on the plan. But hopefully with the help of all of you I can successfully do both. Thanks everyone for the kind words, advice, tid bits and encouragement you have all provided in this thread so far and hopefully will continue to provide with this challenge and others :hug:

Kennedy Happy late Birthday!! I am glad no one bought you a cake. And Bravo to you for staying on plan...Hungry girl is a website. You should definately look into it. It has great recipes and great weightloss tips.

I also mentioned another book and was censored.. wow who new anyway I think from the *** you can guess what the word is. It is a book dedicated to weight loss and it is hilarious. I am trying to get more information about hormones and how they affect weight gain/loss. i have read several articles out of many diet/healthy lifestyle books and wish there was a book with all the answers I am looking for. A book that says your over-weight and if you only eat oreos you can loose all that extra weight.

I heard the thin mint theory before. I will keep the cookies away for now. I am glad this week is almost over. i made the enchiladas tonight and they were really food. My husband even said they were good. I am off to exercise. hope everyone has a great day

Good Morning!
 
Good morning everyone. Yes it is about 7:02 am and I am in the process of checking the weather and getting dressed for work. I wanted to share that I actually feel great this morning. I used to remember those mornings when I used to wake up after sleeping a good 8 hours and still feeling like I didn't sleep at all. I would love to wake up feeling like this every morning. I am not sure if it is because the sun is really up at this time, or maybe because I hear the birds singing outside, it is quite chilly though so I had to put the heat on so I can get dressed. But maybe I was thinking it might actually be the dun dun dun dun dun MY DIET/WEIGHTLOSS. Well I woke up this morning early enough to actually have my breakfast at the kitchen table and not in the car driving to car for once. Hopefully, I can eat on schedule throughout the day. We'll see.

Hope everyone has a great and on plan day!!! I am so excited for a few days of sunshine and warmth. I am hoping to get in some walking. it has been about 3 weeks since I have walked outside and I have been doing cardio and body sculpt inside.. so with that I am hoping that I can walk faster and further than ever. We will see.

Kennedy- that is wonderful that you are feeling so great. I know that if you have a good morning the rest of the day will also be great. I hope so anyway. My goal is to get up before work every morning and get my exercises done. Keep up the good wrok.
I have never made the following recipe but I got it from the Biggest Looser website and thought I would share
Thin and Crispy Gourmet Hula Pizza
1 (about 8”)
low-fat, whole wheat flour tortilla or pita
2 tablespoons
traditional barbecue sauce (7 grams carbohydrates or less per 2 tablespoons)
¾ ounce
(about 3 tablespoons) goat cheese crumbles
3 tablespoons
drained canned diced pineapple in juice, or drained pineapple in juice, or drained pineapple rings in juice chopped into bite-sized pieces
1½ teaspoons
finely chopped cilantro, or more to taste

Preheat the oven to 400° F.

Place the tortilla on a medium nonstick baking sheet. Bake for 2 to 4 minutes per side, or until crisp. If air bubbles form while baking, poke them with a fork, then use a spatula or oven mitt to carefully press the air out.

Remove from the oven and top evenly with the sauce, then the cheese, pineapple, and cilantro. Bake the pizza for 2 to 4 minutes longer, or until the cheese is completely melted. Slice into 8 wedges and serve.

Hi ladies!

Kennedy nice to see you in such a cheery mood! Feels good doesn't it!

I am nervous to WI tomorrow. I hope it goes well. I was up 1 lb on Wed. which kind of discouraged me. Especially since I am not drinking and everything ya know. I drove past some people the other day and they were both smoking in their car and I thought to myself I should start smoking again. HA! I just feel so deprived right now. It sucks! HA! I am sure it will get better the longer I do it. Hopefully!

You guys are always giving me such good suggestions I just wanted to mention what we had for dinner last night! It was soo good!

We had Morningstar Mushroom Lovers Veggie Burgers.
With Light buns, and then tomatoes and of course ketchup and mustard. YUM! We also grilled asparagus.
So it was 1ST 1PR 1VEG. And soo delish!!!!

Cecil- you will do great tomorrow you have been doing so well. When you weigh 3 times a week you are bound to see the fluctuation more than once a week. Just remember how hard it was to get back on plan and how great it feels to be on plan.
