Default Popcorn Shrimp

Good day! Thank you again for submitting your recipe. Below you will find our LA Chef modifications:

Recipe Name: Popcorn Shrimp

Ingredients:
3 oz. raw shrimp; peeled, deviened and cleaned
1/4 cup egg substitute
1/2 cup Fiber One® bran cereal
1/8 tsp. Morton Lite Salt®
pepper to taste

Preparation:
Preheat oven to 350F degrees. Pour eggs into a bowl.
Using a blender or food processor, grind Fiber One® cereal to a breadcrumb-like consistency.
Pour crumbs into a plastic container that has an airtight lid (or into a plastic food storage bag).
Prepare the shrimp by ensuring that they are as dry as possible (use a paper towel to soak up moisture).
Place shrimp in dish with egg substitute and coat them thoroughly.
Transfer shrimp to Fiber One® container and shake until shrimp are well coated.
Place shrimp on a baking dish coated with cooking spray. Bake shrimp for 15-20 minutes (flipping them about halfway through), until outsides are crispy.
Serve with ketchup or cocktail sauce, size according to plan.

Made this tonight. eh... it's OK. Need to make some adjustments to the recipe.

I would add some hot sauce to the egg to add some flavor.

Grind up the cereal well so that it sticks to the shrimp better.

Flavor the cereal a little more. Maybe some Old Bay? (I know, sodium!)

Definitely needs a sauce. Maybe save a fat for some tartar sauce.
