Default Personal Challenge

I challenge myself to eat one salad either as a meal or as a part of a meal.
Every day for 21 days consecutively. Back to day one if I miss a day.

Starting 4/20/06 til 5/10/06

SAlad with dinner- 4/20 day one done Spinach and red leaf lettuce and carrots w/ poppy seed low fat dressing

Vicki welcome aboard. I got my water habit accomplished with the personal challenge so here we go with vegetables. I picked salads because I actually like them alot. I usually only eat them once a week or sometimes even once every two weeks. I only eat vegetables about one maybe two servings a day to sometimes every other day. Here we go!

Tammy, I'll join you too.

Last night I had romaine lettuce, baby spinach, tomato, cucumber, mushrooms with a little bit of shredded Mexican cheese and a little bit of ranch dressing.

Yesterday I also had spinach, tomatoes, onions, mushrooms and bell peppers in my omelet.

Saturday had a salad with my steak and sweet potato.

Didn't have one Sunday, so have to start again tonight.

I had a side salad with dinner yesterday and one with lunch...my biggest problem is taking the time out the night before to make one up for lunch. I can't eat two salads in one day though cause I get really stopped up...
Tomorrow I am planning one as my meal for my lunch..

Susan I'm here I have been so very busy. Looking for full time work. I finally got something today. I should be starting in about a week. I can get back on track as well. I have still been doing well with water but salads could be better. I have been incorporating a lot more veggies in my meals tho. I have been eating lots of mushrooms spinach tomatoes and onions. I will be starting at dai one again tomorrow. 5/2 til 5/23.I can do this. I will do this.

Oops - I'm behind.

Saturday 4/29 - salad bar at Golden Corral for dinner

Sunday 4/30 - grilled shrimp salad at Wahoo's for lunch

Monday 5/1 - salad bar at work cafeteria for lunch

Tuesday 5/2 - lettuce and tomatoes salad for lunch

Susan You are doing great. Okay I restart my 21 days today. Lets race who will finish first. Are we staying on track or will we need to go back?

I bought two bags of lettuce, a bunch of tomatoes, a cucumber, some red bell pepper and I'm not going to throw it away because it goes bad. So, we are doing this together to the finish.
