Welcome!! Sounds like you have great goals!

I think I agree with some of the other posts regarding the atkins diet. I honestly think depriving your body of anything isn't good and once you go off something like that you risk gaining the weight back. I would consider something like weigh watchers where you can eat what you want but it's all about choosing healthy (low point) foods and portions. I think weight watchers teaches you about eat healthy and it does work! Or simply counting calories! Just my opinion!
