Tuesday's thread ended with IP43 wondering if anyone reads the last post of the day - yup. On week days, I am just finding all of you at the bitter end &, like Rosie, enjoy all the discussion & support but feel at the end of the day, all's been said & done & I have nothing much to add.
But we night owls are lurking & may pop up when you least expect us
This past week I started using myfitnesspal (thanks to several posters on various threads who are using it regularly) to track my food & exercise. It's been really interesting. Feels like I am practising what it will be like to move into maintenance by taking baby steps toward independence.
Exciting & scary, both.
I seem to be stalled for over a week now &, even though I love my lunchtime salads & evening veggies, the latter is not as interesting - more utilitarian. Think I will try adding some greens to my morning drink - I miss the green smoothies I used to make in the morning.
Our favorite dinner veggies are either grilled (mushrooms, cherry tomatoes, red peppers, asparagus, zucchini...) or roasted (especially cauliflower roasted, slightly burned - yum). I typically use olive oil and pepper or other seasonings if desired. Quick dinner veggie is steamed broccoli with lemon juice. Love lemony green beans too but since I am on phase 1 still I do not make these often. I do miss roasted sweet potatoes and carrots...
Another favorite dinner veggie for me is roasted or sauteed cabbage - you can add so many flavors that it doesn't get boring and it bulks up a meal really well. I love to slice it into steaks (2 cups is approximately 200 gr) and roast it with olive oil, garlic, rosemary and pepper.
We love mashed cauliflower (made with 0/0/0 chicken broth and herbs), roasted broccoli, and roasted asparagus. I just spread the broccoli or asparagus on a cookie sheet, spray it lightly with olive oil, and shake the pan to spread the oil evenly. Roast it at 400f, shaking the pan every 10 minutes or so, until it is done enough for your liking. Add sea salt and pepper, or lemon pepper blend, or whatever you like! So easy and delicious!

I've just discovered lemon pepper blend and I've been sprinkling it on my vegies while they are quickly sautéing. Delicious. I like the idea of the cabbage steaks. I'm going to try that soon. Thanks Ruth Ann for the idea.
The roasted cabbage is a favorite of mine as well although I was completely prepared to hate it -cabbage, really? Then I tried it and I am hooked. My husband hates the smell but loves the new me, so he suffers.
He grills asparagus for me outside and makes sure to get them really charred and crispy. Same for peppers.
I think part of the success of IP is learning that there are new ways to eat veggies that are not the boring stuff we probably used to think they were/are. Using creative approaches and recipes means that I can get almost as excited about roast cauliflower as I do French fries (no longer).
Busy busy busy here this week as I am weaving my work around my son's FIVE baseball games. Eek! Today is my at-home weigh-in day but I found that my awesome high-quality scale (note sarcasm), that I bought not two months ago, has a bad battery already. Of course it takes one of those coin lithium batteries (that I don't just have lying around) that are supposed to last for years. Anyway....trying to decide if I should actually get a nicer scale since I will be living it daily once I hit maintenance. Any scale recommendations?
On a different note, I think the increase in estrogen is wreaking havoc on my spider veins on my legs. Noooooooooo! I have them since I was in my early 20's, on my upper thighs...and I have made peace with them. Suddenly I see more popping up lower and DARKER. Waaaaah. I'm pretty sure that I read that spider veins are absolutely related to hormones....may have to save up my money to get some zapped once I'm off P1.
I'm going to be an Aunt today My sister is having a c-section to deliver twins today, a little girl and boy. I can't wait to see them this afternoon any my twins are super excited. I think my parent's are a little overwhelmed by another set of twins in the family.
Thanks for the comments on the juicing. It does seem that the carb super count can get high with all the fruit and the. The ideal of doing straight vegies seems a little bitter. Stevia seems to be a low calorie substitute that can be added to sweeten. I may try and see.
Jenny38: I am a little surprised that the naturopath suggested juicing 3x day and yet told you to keep your carbs low. Sooo NOT POSSIBLE if you are juicing (well maybe if you drink straight spinach or kale, lol). Compare the carb/calories in a glass of say, orange juice just for easy reference to eating an actual orange where you would also get more fiber. Perhaps they meant to keep processed carbs low - which makes sense for a normal diet anyhow.
Maybe the naturopath didn't understand that you are already eating 4 cups of veggies a day on this plan, it's not like you are just eating space packets, lol. Four cups a day is way more than the average N.A. diet.
Well, after all the cherries and cheese this past week... I am up to my maintenance weight limit and tummy is not a happy camper! I think back to P1 for a couple of days before we go away (3 1/2 day trip) - I don't want to feel so bogged down and bloated this weekend.

I roast a big tray of all color peppers, cauliflower, pablano pepper (for some heat) & celery every week. I eat them as is the first day & make the rest into veggie puree type soup with chicken broth.
evemomma- I was told that veins may appear more prominent for some time while losing weight as the top layer of fat which they were feeding dissipates. They should retreat back into the body. Not sure if this applies to spider veins, but one would think so.
I am struggling with holding on to two pounds right now that popped back up. Has anyone tried cycling pure protein days to lose water (sort of an extreme bootcamp)?
