I just tried pickled cauliflower.....
And it was surprisingly good! I am pretty sure it is legal, as it is 0/0/0 on the jar. Obviously I could not eat 2 cups worth at a sitting, but I am a olive oil/vinegar salad dressing kind of gal, so I figured I could chop a couple of florets into my salad or mix it with my regular steamed veggies to give it a little punch.
I am enjoying finding new ways to liven up bland foods without the use of batter and fattening dips.
