Default IP version of shepherds pie

Just wondering if anyone has tried making a shepherds pie on phase 1 of IP?
Planning on doing the hamburger on the bottom my regular way, and using cauliflower mash on the top, but need suggestions on veggies to put in the middle since can't use peas, corn, carrots!
Any suggestions?

Check out Lamberjules recipe for Italian Shepherd's Pie. It's absolutley wonderful and one of my favorite meals

She also has one without the italian seasonings that it delish. I just had to go through her recipes to find it. My hubby and son really liked it too.

Definitely use mushrooms as a middle. Possibly a green bean ? (altho that is a restricted veggie). Red or green bell peppers. Maybe fried celery (to substitute for onions).

I agree with the above - try lamberjules shepherd's pie. She uses mushrooms, red peppers, and red onions.
