Default Chicken Fajita?

Could this be eaten is on phase1?

To me it all looks ok except the tomato?

Feedback please?

Oven Baked fajita

Ingredients:

1 pound boneless, skinless chicken breasts, cut into strips
2 Tbsp vegetable oil
2 tsp chili powder
1 1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp seasoned salt
1 (15 oz) can diced tomatoes with green chilies (Rotel)
1 medium onion, sliced
1/2 red bell pepper, cut into strips
1/2 green bell pepper, cut into strips

Directions:

Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish.
In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt.
Drizzle the spice mixture over the chicken and stir to coat.
Next add the tomatoes, peppers, and onions to the dish and stir to combine.
Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender.

Guess it would have been good to post the recipe huh? DOH!!!

I am only on my 2nd week but this is what I see; Onions have to be raw, tomatoes are restricted so that's okay, switch vegetable oil to the olive and I think everything else is great. You would just have to be carefull on serving size. Good luck and it sounds yummy

I ate fajita filling (beef, pork, chicken) many times in phase 1! It's a great dish to have when you eat out as well - just pick out the onions and leave the tortillas and sides (rice, guac) off the plate!

At home, I use Badia fajita seasoning - no MSG, no sugar, and tastes great in fajita mix and on eggs!

Onions don't necessarily have to be RAW but you don't want them carmelized. They can be lightly cooked.
I avoid the whole thing by using leeks most of the time.
Most people look forward to carrots in maintenance...I look forward to adding back in all the cooked onions!

Agreed and I also make mine with cauliflower tortillas. Sooooooo good!

So I'm sure I missed this in one of the recipe threads (slowly trying to make my way through reading them all) but how do you make cauliflower tortillas?!?!

^^^ Google the recipe so you can see pictures but its important you follow the recipe exactly and squeeze all the water out of the cauliflower.

Cool thanks! Good tip too re: all the water in the cauliflower. Googling now...

I swear, people on IP at 3FC have the coolest recipes!
