Beach Ideas

  • Hello! I'm new here and looking for some advice. First of all - my "history" is that I started IP from some paperwork of a friend so I don't have a coach. But, things are going well so it is working despite my "ghetto" version haha.

    So, I'm headed to the beach in about a month and my question is - lunch on the beach. We traditionally we pack our lunch and eat on the beach. While on this diet, I really prefer warm veggies for lunch because I'm just not crazy about the numerous salad dressings I've tried thus far. I've tried some of the Walden Farm ones, some oil and vinegar and some other recipes I've found on the internet. I used to be a HUGE salad lover but I loved it with carrots, cheese, raisins .... well you get the picture. Anyway, since I started IP I've been having warm veggies which I love but that will not work on the beach.

    Any ideas of a good lunch that is packable to eat on the beach? I thought about rolling a piece of lean deli meat and some celery sticks (which I hate) or using the bars. Anyway, I just thought I'd ask you pros for some ideas because I don't want to fall apart on vacation completely

    I'm with you! Warm veggies stick with me so.much.more than raw all the time, altho I do like the cucumber/onion salad with ACV/water/stevia dressing and I've grown to like coleslaw made with WF dressing (adding some celery seed). When you eat the cukes/onions from that salad, you can just re-load right in the same dressing.

    Here is my thought: If you bring cooked veggies, stick 'em out in the sun before eating. The sun should heat them enuf so they're not cold. I'm thinking I could do this with veggie stir fry and mashed cauli.

    Veggie stir fry could even be made like Fried Rice, with an omelet packet. I'd try it at home before leaving...see if sticking it out in the sun for a bit will warm it enough to eat it (altho beaches have more sun rays bouncing around). It won't be "hot" but it might work.
  • Lettuce "wraps" were a go-to for me when everyone else was eating sandwiches! You can wrap chopped chicken, lunch meat, or even canned tuna in a big leaf of lettuce (romaine or leafy green/red lettuce works better than iceberg). I used to wrap them up with thinly julienned bell peppers and celery for extra crunch! You can do tuna or chicken salad with mustard so that spoiled mayo isn't an issue.

    Awesome idea! I just picked up a huge jar of picked asparagus. Can't wait to try it with roast beef.

  • I eat my veggies hot and pureed in Proti-Diet Cream of Chicken soup almost every day for lunch. If you have a thermos, that might be an option. Although I don't know how appealing a big, hot thermos of soup would be on the beach...
