FYI...tofu Alfredo is so good, DH even liked it!!! He isn't on IP and doesn't like tofu!!! I added 1/4 cup of good quality parm cheese since I wasn't adding any meat...then I added sauteed mushrooms, scallions and swiss chard. I had it over roasted cauliflower and DH had pasta. It was sooo good!!!

We were discussing the different veggie options to add in the immediate future and meats (chicken or shrimp would be divine) once I am in maintenance. DH's specialty is Alfredo and while this isn't nearly the same as his homemade version, it is a great substitute for an average weekday meal. Thanks for the suggestion! I'm gonna go do some research on tofu possibilities! LOL
