Default Tofu Alfredo

FYI...tofu Alfredo is so good, DH even liked it!!! He isn't on IP and doesn't like tofu!!! I added 1/4 cup of good quality parm cheese since I wasn't adding any meat...then I added sauteed mushrooms, scallions and swiss chard. I had it over roasted cauliflower and DH had pasta. It was sooo good!!! We were discussing the different veggie options to add in the immediate future and meats (chicken or shrimp would be divine) once I am in maintenance. DH's specialty is Alfredo and while this isn't nearly the same as his homemade version, it is a great substitute for an average weekday meal. Thanks for the suggestion! I'm gonna go do some research on tofu possibilities! LOL

YEAH! Glad to hear it! Tofu Alfredo is how I introduced tofu to my hubby because I LOVE the stuff and just wasn't going to make two meals a night when I craved it. Check out Nava Atlas. I LOVE her recipes and you can find most online.
