i am soooooo ordering the pizza dough....looks wonderful! Thanks again for taking the time to share your recipes....I dont think I would be able to get though this without them!!!

I picked up a box - instead of making into a whole pretzel I made inch-long "bites" before baking, sprinkled with salt and garlic powder, and used the sauce packet as dipping sauce! Perfect on the go!

I am sitting here munching on the pad thai dish.... and Rainbow you have done it again....this might be my favorite dish you have invented! (my non dieting husband agrees!) I added hot pepper flakes and some curry to spice it up....then I tried to make some cauliflower rice with soy sauce...(it was awful, I haven't mastered that yet!) But you portion of my dinner is just out of this world....i will DEFINITELY make this again! Thank you for sharing with us!

Sweet & Spicy Mac & Cheese with Broccoli




wow!!! this was so much better than i expected!
CREAMY....CHEESY....SPICY....AND A DASH OF SWEETNESS!!!




I started with this....Proti-Thin Fusilli and Health Smart Vanilla Pudding and Land O Lakes Cheddar Cheese Seasoning Sprinkles.

I made up the pudding for a snack....and took out 2 tbsp for my "sweet & spicy cheese sauce".... i added 2 tsp of the cheese sprinkles....and gave it a good stir!!

( i saved the rest of the pudding....and added some torani sugar free lime syrup for some key lime pudding snack!!!)




I put on the fusilli to cook in salted boiling water for 15 minutes...



next....i spiced up the "cheese sauce" with some smoked paprika chipotle and some chipotle pepper flakes!! i let this sit while the pasta cooked...to let the spices and sauce marry!!




after 15 minutes of cooking the pasta...i added 1 cup chopped frozen broccoli florets...and cooked for 5 more mins.



then i mixed my sweet & spicy cheesy sauce with the pasta and broccoli and gave it a good stir!! then added it into a nice bowl!






added some salt and pepper...and then topped it with
5 crushed IP southwest puffs!! for some crunch!






wannabite???? YUMMMMY!!!!

Default LEMON BASIL CAULIFLOWER FRITTERS with RED CURRY DIPPING SAUCE




Lemon Basil Cauliflower Fritters with Red Curry Dipping Sauce


these are D.E.L.I.C.I.O.U.S.!!!!



2 CUPS CAULIFLOWER FLORETS
....cooked in 4 tbsp water in the microwave for 6 mins.
or until fork tender




i line a small bowl with 2 layers of paper towels
scoop the steamed cauliflower in and give a gentle squeeze



to get all the excess water out.



crush florets with a fork!!



this is what i used!
1/2 packet ideal protein potato puree
zest of 1 lemon
1 tbsp diced pimentos
(could also use diced roasted red peppers too!!)
4-5 fresh basil leaves
2 garlic cloves finely diced
1 egg white
dash red pepper flakes




add it all into your bowl



then give it a nice mix!!




RED CURRY DIPPING SAUCE
1 tbsp walden farms of homemade mayo
1 tsp red curry paste
1 tsp yellow mustard
salt and pepper
1-2 tbsp fresh lemon juice
to make sauce to desired dipping thickness




mix all of the above well in a small bowl



heat your non stick skillet and give a spray or two of olive oil


make 10-12 little balls and fry a few minutes until browned!!



ENJOY!!!!

you can easily use the whole packet!! these are delicious!!

i like to use 1/2 packet because then i can still have 1/2 bar too!!
you will want more!! haha

Lemon Blueberry Scones and Wild Blueberry Acai Green Tea with Lemon




i started with this:


1 packet ProtiDiet Blueberry Pancake (dry mix)
1 egg white only
1/2 tsp baking powder
dash salt
3 TBSP Blueberry Tea
1 TBSP Fresh Lemon Juice and Lemon Zest




add all ingredients into a small bowl



mix gently until all dry ingredients are moist, do not over mix



spray 2 small pyrex custard cups with non stick spray
you could also use a muffin tin




divide the mixture into the 2 pyrex bowls
BAKE 350 for 15 mins




lightly browned and looking delish!!





cool slightly



this is what the bottoms look like!! YUM!!



fluffy goodness and not rubbery at all!!





i used
NATURE'S HOLLOW SUGAR FREE WILD MOUNTAIN BERRY PRESERVES
but you can also use Walden Farms Raspberry Spread

this adds 5 net carbs to your brekkie

from what i have read, if the sugar alcohols are more than 5 grams
you subtract HALF from the carb count to get a NET carb count

carb: 8 sugar alcohols: 6
8 minus half of 6 ~ 8-3 = 5 net carbs

some people say to subtract the entire amount of sugar alcohols
carb: 8 sugar alcohols: 6
8-6 = 2 net carbs

either way it does add carbs....so its up to you


don't take my word for it, look it up

Make your cup of Bigelow
WILD BLUEBERRY & ACAI GREEN TEA
and use 3 tbsp for your recipe...
then add the rest of the lemon zest and squeeze the entire rest of the lemon juice into your tea!!

ooooh so good!!!
