The easiest way to measure veggies is the water displacement method. Cut the top off the peppers and halve them. Then fill a 4 cup container with 2 cups of water. Add pepper slices until the water level rises to 4 cups. Voila!! 2 cups of veggies.

Do it once at home. Then you'll know approximately how many whole peppers it took you to get 2 cups. Then you can just take that many whole ones with you.
