No problem! I had to do that a few days ago, it was late and I was WAY behind preparing dinner, and I only had about 6oz of chicken breast leftover. Added a hard boiled egg and I was good to go!

I have made these twice and absolutely LOVE them with the W/F Blueberry syrup. I steam the califlower rice in the microwave for 4 minutes, but now I'm a little confused as my Phase 1 sheet says I can only have 2 whole eggs as my evening protein, so I make my pancakes with 1 whole egg & 1 egg white then I cook the other yolk. Should I be eating 4 more ounces of protein?

We are supposed to be eating 8oz protein daily. The equivalent of 8oz protein is FOUR whole eggs plus two egg whites. Two eggs is equivalent to about half of your dinner protein so you would still need to eat 4oz of protein from another source.

Thank you so much for bumping this, I had missed it the first time around.

No, it's just veggies and some egg white. It would count toward your daily veggie intake.

If you decided to also mix in a serving of protein powder or an IP packet (maybe the vanilla shake?) then you could use it as a replacement for a packet on its own, but you still have to count it towards your 4 cups veggie per day as well.
