Default Unrestricted Choco coconut cookies

So after following last weeks thread of the unrestricted chocolate cookies, adapted from the mug cake, I decided to pick up a few different flavor extracts. tonight, i couldnt decide between coconut and mint. I opted for the coconut. SO AMAZING!!!

I ended up with 6, big, crispy chocolate mint cookies!!!!
and the best part, they are unrestricted!!!!

OK-- Inspired now and off to make "cookies" to take to work tomorrow.... mmmmm... I ended up buying some teflon (the soft plastic kind) but they are "egg rings" and I got two round ones so will use those to try making "buns" a la Rainbow smiles Style.

Yummy! I'll have to try that.

I occasionaly add coconut extract to my chocolate shake with some coffee. Makes me feel like I am having a coconut mocha from starbucks.

these sound awfully good, and I'm in maintenance !!! I sometimes put the Starbucks peppermint flavoring in my chocolate spinach smoothie...delish....

I want this cookie recipe too ! I'm a sucker for cookies !

Question for those of you who have made the cookies, will it work if I use the pudding mix? I have some from HealthSmart that can be used as shakes or puddings. I just want to avoid a gooey disasterous mess if the pudding mix won't work. Thanks!

ok...i only had a half packet of lemon pudding mix....to test with...because i traded all the pudding mixes away because i didn't like them.

the recipe stayed the same despite half the packet...i tried with less egg whites but the mixture was too crumbly....and the only thing i added was 1 tsp lemon extract to enhance the flavor

it wasn't much dough....so i decided to make tiny cut out lemon cookies.



the dough was a lot like play dough...easy to roll with my hands and easy to cut out.



because they were so tiny, i baked for 10 mins and they were pretty done...starting to brown on the bottom.

they were very light inside...a little chewy....and tasted lemony...

these are not bad!!! not as good to me as the cappuccino ones....which were extremely CRUNCHY!!!

and these....using the ip lemon pudding....STILL HAS THAT IP PUDDING TASTE...that does not appeal to ME.

but if you like the IP lemon pudding i am sure you'd LOVE these lemon cookies!!

Thanks Rainbow! That's exactly what I needed to know. I just happen to have some lemon IP packets that I was looking at this AM and I love anything lemon.
I am going to try it with those. I also have the HealthSmart Cocomint pudding that I want to try the cookies with. Maybe I will experiment later today. Can't wait to have some cookies!

Cookie recipe

1 Pkg Chocolate Drink (or flavor of choice)
1 Egg White
1 tsp Baking Powder
1 Tbsp Olive or Grapeseed Oil
1 tsp Splenda or Stevia
Splash of Vanilla (or flavor of choice)
2 oz water

mix all together in a bowl. make 6 cookies and flatten out with back of a spoon. bake on 350 for 20-40 minutes. 20 minutes will give you "cake-like" cookies, and 40 minutes will give you crispy cookies!!
