Rainbow posted a recipe including cooked rutabagas in a slow cooker. So now I can put away my AX!
So I did that yesterday...cooked them all day, and last night I peeled and sliced them and kept them in the fridge.
They turned out yellowy-orange...Beautiful color.
So for lunch I mashed 2 cups of them slightly...not too much...added b2 Stevia Pkts, 1/2 t cinnamon, 1/4 teasp each ginger and nutmeg (I didn't have pumpkin pie spice or I would have used it instead).
Sauteed these in 1 teasp of EVOO until they were hot, and added the omelet mix with 5 oz of water. Turned to low, it took 10 minutes to cook.
Yum. Tasted like a pumpkin pie.
Next time I will only use 1 cup, since rutabagas are higher in carbs than I like.
But it was good, and simple, too.
Week 1, Day 2 (I'm using 4 packets on my first week)
B - chocolate shake w/spinach and cinnamon - YUMMO!
Snack - "Just the Cheese" don't know if it's "legal" but the numbers are comparable to other OP snacks.
L - big lettuce salad w/1c veggies, pepperoncini and 3 oz chicken dressed with homemade cider vinaigrette dressing (evoo, cider vinegar, dijon mustard, splenda, and garlic powder) I added cilantro, and that with the pepperoncinis and dressing made for a great salad!
Snack - RTD shake
D - Mock Udon Noodle soup - shiratake noodles, chicken, mushrooms, spinach and leeks in udon noodle broth. Awesome - even my little girls tried it and loved it!

This sounds AMAZING! I will definitely be trying this one out! Sweet fauxtato pie! I had done them mashed after boiling, but i really think roasting/slow cooking is the way to go
to pull out that natural sweetness.
