    Tofu and ground turkey meatballs with shredded cabbage.

    how do you make your pancakes??? i tried the chocolate pancake and it was awful and rubbery!! what am i doing wrong??

    Lunch: Salad w/veggies & WF Thousand Island Dressing, IP Chicken Noodle Soup
    Supper: 8 oz Round Steak, Rutabaga fries
    Snack: IP Blueberry, Cran-granata drink

    FYI - my clinic doesn't even carry the pancake mixes, with the exception of the Crepe mix. Don't know why, but they don't like us to have them. I'd love to try the orange pancakes.

    I use a pudding packet and add 2 egg whites, cinnamon, vanilla extract, baking powder and a tad bit of water. It makes 3 or 4 pancakes.

  • Breakfast: 1 EAS loCarb shake
    2 eggwhites w/hot peppers and 3 sm mushrooms (Pam spray)

    11am: Sliced cucumber with WF Ital Dressing

    1pm: 2 cups collard greens sauteed in 1 tsp olive oil, garlic, hot spices
    and my EAS loCarb shake

    6PM: 8oz Roast Pork tenerloin roasted with herbs and spices
    roasted turnip 1 cup, zucchini noodles

    8pm; garden salad, 1 slice rred onion, cuke,hot peppers, wf dressing

    10pm: EAS loCarb shake

    AND LOTS OF WATER IN BETWEEN!!!

  • I bought a mandolin yesterday ... WOW! It is amazing; I can now slice through the veggies with no effort at all :O)) I just cut up my first jicama (had to quarter it first) and wizzed through a pile if "fries" in no time - why did I wait so long to buy one???

    I think I like jicama; it is very sweet when raw, and the fries were actually a little crunchy. I think I will make more for dinner and give to DH - wonder if he will notice the difference - lol

    Lunch: IP butterscotch pudding made into ice cream
    2 C cucumbers with salt and lime juice

    Snack: Tea
    IP cranberry bar

    Dinner: Chicken fajitas with veggies

    I just got one too! and I loved it! I want to use it especially for the rutabaga fries.

    I'm so jealous. I want to try it but my grocery store doesnt have it, or at least I dont see it anywhere. Where do you get yours?

    Safeway ... it was in the produce section where they have all of the fresh herbs, peppers, garlic ... It is HUGE, so I quartered it and put each piece in a ziplock bag - I read it stays good for 2 wks. I think I will check other stores though, it was REALLY expensive ($7.00 for one).
