Default Baked "Apples"

So I am wanting to make DH these baked apples but have seen a few different ways to make them. First I should ask do I peel the zucchini? (I don't like zucchini at all so I have never cooked it!!)

I have seen where you fry them first and then bake them, then I seen no fry and bake only.

Please help a desperate wife trying to please her husband!!

I don't peel mine, I just cube the zuchinni, put a pack of splenda and some cimmamon then mircowave for 3 minutes or until they are soft

I wonder if I did something wrong? Zucchini + Splenda + cinnamon + a light sprinkle of nutmeg + a drop of vanilla extract, then microwaved it for 3 minutes and it tasted very odd... I could smell and taste the zucchini through the spicy sweetness and it literally made me sick. Help!

Large zucchini can be peeled, then sliced lengthwise and seeded. Now slice crosswise to make pieces that look like apple slices. These are seasoned with cinnamon or apple pie spice and a bit of allowed sweetener. Microwave in a small glass dish with a lid for a few minutes for a "baked apple" dessert.

That's the recipe I have

Thanks!! I made these for him and he loved them. I have four other recipes for them and this one is so much easier. I tried one and spit it out! I don't like the zucchini taste at all.

I had the same time the first time I tried to microwave zucchini. Maybe I didn't microwave long enough?? However, since then I tried slicing Zucchini adding splenda and cinnamon and wrapping the in foil and cooking them on the grill..... Yum!

Thanks all! You intrigued me with this idea so I had to try it. I don't think I put quite enough stevia in it but it was pretty darned good.

I peel my zucchini and them slice it, spray it with I can't believe it's not butter, sprinkle with stevia, sprinkle pumpkin pie spices or apple pie spice and then microwave for 2- minutes until soft. Yesterday I had them with the Walden Farm's Carmel Dip. Today I brought the Walden Farm's Caramel Syrup to pour over instead of having to dip them........it is really yummie!!!!! I love Caramel Apples, and this is pretty close.

You can also try WF apple butter. Cut up the zucchini mix in apple butter, cinnamon, nutmeg and microwave. So yummy!

I totally forgot about the WF carmel. I have both the dip and the sauce. I went to the store today and bought kale and more zucchini. I am going to try to make these again and like them. I really want the sweet things once in a while. I really am not a sweets person, but a girls got to have something sweet every few weeks!!

One of the secrets to when I make this is adding lemon juice. (Fresh squeezed from 1/2 a lemon is best.) The acid of the lemon plus the truvia and cinnamon help transform the taste of the zucchini. I also never microwave, but put in a glass pan in the oven on 200 C for about 10 min. The baking seems to give a more apple-y taste in my opinion.

Adding sugar-free Caramel or Raspberry syrup (DaVinci/ Torani) also gives a different taste, but I dont add the lemon if I do caramel and usually prefer just the lemon/cinnamon/nutmeg/allspice version.

Note that US grocery stores often have a "Apple Spice" blend seasoning which is cinnamon, nutmeg, allspice which is very good. The Pumpkin Pie spice (also has ginger) is also good on this.

Oooo, I found another thing that makes wonderful "BAKED APPLES" and it stays crunchie. It is Jicama. It has a pear like consistancy if eatten raw, wonderful dipped in the Walden Farms Carmel Dip. But you peel it, then cut it up into chunks, speay it with I Can't Believe It's not Butter Spray, sprinkle with Stevia and then add either the Appled Pie Spice or the Pumpkin Pie spice, microwave for 3-4 minutes, when I take it out, I spray a little more ICBINB on it, toss it and then add the Walden Farms Caramel Syrup or Dip. This is absolutely delicious. Jicama is now my all time favorite veggie, it is so versitile. Last night I made frech fries out if it, a little sweet, but stayed crunchy and was really good. It can also be cut up and used in stir fries, like having water chesnuts, cut up in a salad, baked like a baked potato, but you have to scoop it out of the skin, do not eat the skin, or boiled and made like mashed potatoes, sliced and fried in your olive oil for liked fried potatoes or sliced and baked in the oven for chips. It is great sweetened or savory.

Thanks for all your ideas, I bought one this week but still haven't gotten the nerve to try something with it. I think I will today!
