I love endive, core and all, raw. It's a great finger food when you want something with crunch and it's equally good chopped, as a salad, with a light cider vinegar dressing, ground salt and pepper. Or if you're roasting a pan of vegetables, cut an endive in half, spray it with olive oil, and roast; or just spray the surface and roast. Again, go light on the oil because endive tends to absorb oil easily.

(N.b., my endive is actually the real thing in that it comes from Belgium. A big change from eating it in Hawai'i after it travelled 2,500 miles from CA.)

FinnSteve's chili verde made with pork loin rather than chicken. Cooked all day in the crock pot.

Roasted broccoli and left over turkey breast (brined and marinated in buttermilk for 24 hours), chopped and made into a sandwich of Romaine leaves, spread with home made aioli. (Had to do something with all those egg yolks left from Steven's incredibly good recipes.(
