Recipe for Pudding Cake

Hi All,
I wanted to post this in a separate thread instead of the recipe thread because I don't know how many people go into that thread on a daily basis. Anyway, here is a recipe that my counselor gave me to make the IP puddings into little cakes! They are awesome!

-Preheat oven to 350 degrees
-In a blender, combine (2) egg whites, (1) t. vanilla and 2 oz. of water. Blend well
-Pour liquid contents into a bowl, and gently fold in pudding packet. I usually add a little powder, mix it up, add a little more, etc... The final result is a "batter" similar to brownies. And yes, I lick the bowl and spoon ;)
-To bake, I use (2) small corning ware dishes, you could also make them in a muffin tin, and divide them into (3) equal muffins. I spray the bottom of the dish with Pam so the cakes won't stick.

The cakes will get VERY large while baking, and will deflate when cooling. If you put too much batter into a small baking dish, your cakes will literally explode in the oven. It is VERY important to only fill the baking dish or muffin tin 1/2 way. Which is why you will get 2 small cakes or 3 muffins.

-Bake at 350 for 15-16 minutes. Let cool and enjoy a mini cake.

(2) notes:
1). I have only tried this with Lemon, Butterscotch and Vanilla puddings. They have all turned out excellect! I haven't tried with Chocolate because I don't really care for the chocolate pudding, it is very chalky to me.
2). If you are making the cakes in a muffin tin, fill the empty muffin "holes" with water so that the cakes bake evenly.

Yum!! I'm going to try and make this today :carrot:

So is one serving all 3 cupcakes? :D

jennydoodle 06-20-2011 12:18 PM

Yes, all (3) are one serving because it is (1 ) packet! I make these just about every night. For me, it is the perfect answer to dessert :)

becca1978 06-20-2011 12:35 PM

So would the egg whites count towards your daily amount of other protein? (If that makes sense?)

jennydoodle 06-20-2011 12:48 PM

She told me no because it is just (2) egg whites and she said that calorically they are virtually nothing, so I do not count them. She may have also told me that because I exercise 5-6x week and she figures the extra protein cannot hurt.

2 large egg whites:
32 Cal
0 fat
0 carb
7 protein

I guess it is up to you if you want to count them, but I would think that an extra 7 grams of protein would not be a problem. But if you feel more comfortable, talk to your counselor first.

Thank you Jennydoodle!! This sounds great and I plan to try it tonight!!!

3FCuser2 06-20-2011 12:59 PM

yummy! I am definitely going to have these for dessert tonight :) thanks for sharing

Losingtime 06-20-2011 01:19 PM

Awesome! I'm excited to try this :) Its so great to have something different to try and something sweet and delicious!

champaignsupernova 06-20-2011 01:32 PM

WOW! What a great idea. I am totally going to have to do this tonight. Thanks for sharing.:D

jordanna 06-20-2011 03:58 PM

Made chocolate cinnamon cake for lunch...SO GOOD! Might try strawberry vanilla swirl tonight...mix half pkg of vanilla & half pkg of strawberry and mix each with one egg, 1/2 tsp of vanilla and 1 oz of water and then swirl them in the mini loaf pan before cooking :)

3FCuser2 06-20-2011 05:47 PM

yumm-o!
I just made a batch of chocolate mini cupcakes they're perfect because I can eat them through the day. Lets me space out my single evening snack.

jennydoodle 06-20-2011 07:22 PM

The chocolate turned out good? In general, I do not like the chocolate pudding although I was sure it was going to be my favorite as I love anything chocolate. But I felt like it was very chalky, so I haven't bought it since. But maybe the cakes / cupcakes turn out better?

I bet the vanilla with cinnamon would taste really great too.

I am so glad you guys are liking the cakes! It is my favorite IP food and I look forward to them every night. They really are a treat, and EASY to make.

cajunladybug22 06-20-2011 09:12 PM

I'm going to have to try this...thank you for posting!

Shrinking Sandra 06-20-2011 11:44 PM

Thanks for posting YUMMY!!!!!! vanilla was amazing! I also added a dash of pumpkin pie spice (cinnamon nutmeg clove ginger) what a great treat!

LeaArr 06-21-2011 09:28 AM

I tried this last night. So yummy. Thank you for the recipe.

Bickel83 06-21-2011 09:42 AM

I tried this last night with Lemon pudding. Mine turned out more like souffles than cakes. I may have blended the egg white too long. Or maybe needed less egg all together. Any thoughts on what went wrong? Also, has anyone added splenda or other sweeteners to the receipe? It seems it was missing a little sweetness.

jennydoodle 06-21-2011 09:59 AM

Bickel- they are not exactly "cake" consistancy like you & I think of real cake. It doesn't sound like you did anything wrong. I have also found with the lemon I need to cook it a little bit longer, not sure why.

I have not added any sweeteners to them as they are sweet enough for me. One thing I have thought of is adding a little bit of fresh lemon juice to the lemon, but so far have not done it.

jd447 06-21-2011 11:24 AM

Yumm!! Thanks for the recipe. I thought they were very much like a creampuff. I used the vanilla pudding and added some stevia - about a 1/2 tsp. Then I used a mini muffin pan. I split them in two and put my cooked zucchini/rhubarb mixture on top - mmmmm....tasted like pie!!! :T I think they would be great with pudding in them - just use 1/2 the pudding to make the muffins and put the rest of it in them. With a little WF jam or syrup on top would be a yummy treat!

WijitingBoo 06-21-2011 12:20 PM

Definitely going to have to try this.
The vanilla with cinnamon sounds yummy (I love coffee cake type stuff).

Jordanna - how did the strawberry/vanilla swirl turn out?

Also, anyone try the banana one yet? Wondering if it will seem like banana bread.

Thanks for posting this. I had tried the oatmeal cookies recipe (but I think the maple over powers everything and I am not big on maple) and only kind of liked the chocolate pancake cake things.

Timetolose 06-21-2011 12:26 PM

This was great!! I tried it last night...I also wasn't fond of the chocolate pudding and was trying to figure out how to use them. I did have to mix for a while to get rid of the clumps but they turned out great! I did feel like I was getting something bad for dinner :D I am buying the lemon pudding tonight and will try the cake recipe but the muffins were amazing!! Thank you again for posting!!

The strawberry needs to be cooked longer than the chocolate does so it was a bit eggier than hoped but I'll keep experimenting. I was going to do the vanilla spice cake for lunch today and I was thinking of doing the butterscotch with pumkin pie spice soon too...

AprilH3 06-21-2011 01:05 PM

Got any idea if the chocolate drink would work? I don't have any puddings left and since I don't have a coach any more I can't switch them. These sound so yummy!

jennydoodle 06-21-2011 01:33 PM

Maybe I will get a box of chocolate and see if I like it better as a cake than I do as straight pudding. Banana would certainly be interesting, but I am not committed enough to the flavor to buy a whole box.

Not sure if the chocolate drink would work. I am not enough of a cook or baker to actually do experiments on my own. I am more of a "follow a recipe" kind of girl. I guess you could try it and see what happens.

3FCuser2 06-21-2011 01:37 PM

I know that I've had zucchini cake before I started program. I wonder if there is someway to tweak things a little bit to make these into chocolate zucchini cupcakes. It might also help with the texture too!

AprilH3 06-21-2011 01:41 PM

I guess I'll just give it a try! I'll let you know if it works!

These sound so yummy! I wonder how a chocolate/banana swirl would taste? I love banana bread muffins w/ chocolate chips. Maybe this would be similar! Thanks, everybody, for the great ideas! Doing some baking tonight!! :D

lakerlover 06-21-2011 01:57 PM

This is a great recipe. I made the butterscotch and put WF Marshmallow Creme on as the "ICING" SOOO GOOOD!!

I've made these with grated zucchini, it's a good way to get in veggies for people like me who can't stand them. I've also put stewed rhubarb at the bottom of the pan and made a rhubarb upside down cake.

I usually add one pack of the splenda coffee sweeteners in French Vanilla flavour, it gives it a bit of an angel food cake flavour.

It's the best to experiment with, I've stuffed them with tons of different walden farms products or would spoon a bit on top. delish.

yum. I will definitely give these all a try!

Yum!

Thank you so much for this recipe!!! I just finished using the vanilla with poppy seeds for breakfast! So good! I was missing poppy seed muffins and this was just what I needed. Next I think Dark chocolate cinnamon.... yum. :)

Ohhh poppy seeds good call... Have to try that too!

How much zucchini do people put in their choc zucchini cake? Tried half cup grated zucchini and it was too much, next time I would do a 1/4 c and maybe pat it dry before baking with it as it was really wet...also, I would bake it for longer next time if putting zucchini in it.

Also has anyone tried keeping them for the next day?

Timetolose 06-21-2011 04:21 PM

I also would like to know if anyone has kept the muffins longer than a day...if so how do they taste? I was thinking of making a bunch so I could just grab and go?! Thanks!

thinkthin135 06-21-2011 04:35 PM

Wow those all sound so great. Thanks for sharing the recipes. I am going to go home and try these tonight, can't wait.

redhead14 06-21-2011 04:54 PM

Don't mean to ask a stupid question......but do you make the pudding or just use the dry with the egg mix?!

WijitingBoo 06-21-2011 09:18 PM

I believe the way the recipe reads, that you don't follow the packet directions. You just add the dry to the egg and 2oz water and such that is listed.

Also, the location I go to allows for purchasing single packets so I think tomorrow (which I am not looking forward to cause home scale says another week of no movement) I will get banana, chocolate, strawberry and vanilla puddings and start experimenting. I will let people know how the turn out!

Thanks! Must have been a bubble head moment when I read the recipe the first time....:o
Made them using banana......yummy

AprilH3 06-21-2011 11:48 PM

Ok, I tried it with the chocolate drink and they were pretty flat but otherwise good. Nashua has a variety pack of puddings I think I'm going to try it again with those. And their chocolate cake too. Mmmm cake.

dawnmad 06-22-2011 12:27 AM

Yum! I'm Gonna Tyr This In The A.m. For Breakfast.. I Have Been Missing A Little Something Sweet With My Coffee!

MAYBE LEMON ZEST WOULD BE A YUMMY ADDITION...

M0vingon 06-22-2011 08:13 AM

I tried these last night with chocolate pudding. Mine didn't turn out all that well... I beat the eggs until frothy, but not stiff. I'm thinking I'll try again and beat the eggs stiff, mix the water and vanilla into the pudding and mix it- and then fold the two together.
Any suggestions/input?
