I am not sure, I always make them fresh. I would think that maybe one or 2 days in a ziplock would be ok, but not really sure about freezing them. Why not make some this week as a test run? Otherwise, I think you might have to wait until you get home from vacay to have the cakes.

I love this recipe! I experimented with it as a base for "raspberry shortcake". (It's the season and everyone is eating strawberry shortcake)
In my pre IP diet days I would eat angelfood cake, strawberries, jello and whipped cream. so my IP version thanks to this recipe is now...

Your basic pudding cake recipe made with vanilla or buterscotch pudding 1/8 tsp baking powder added then baked as directed.

One packet raspberry gelatin. set and cut into cubes.

One packet vanilla pudding prepared.

Devide ingredients into three pretty bowls by layering cake first then gelatin and top with prepared vanilla pudding. 3 servings with one packet count each.

Has anyone tried the peanut butter syrup in the chocolate pudding cakes? Like a Reeses peanut butter cup? Or, how about the nasty WF peanut butter with the chocolate pudding?
I have some peanut butter syrup coming I will try it.

so, I made these exactly as prescribed, I used the dark chocolate pudding mix. They looked like so beautiful, but the taste YACK, I had to throw them out. I am going to try vanilla tomorrow. I have never thrown out anything chocolate in my life, but these were terrible :( was soooooooooo looking forward to them.

chocolate is probably the worst one.. i tried chocolate my first time as well, made the cookies... just discusting... but then i tried with the vanilla pudding, lemon and butterscotch, and they were all decently good. my fav is probably butterscotch and lemon.. add some extra vanilla extract... im going to try it with almond extract next time..

Yesterday I made vanilla ones and chocolate ones took them to my clinic today for everyone to sample they went over very well. Thanks for the recipe!
Today I made Lemon and put in 6 muffin cups and then made strawberry and filled into the same six cups as the lemon then w/toothpick swirled them together came out great tonight i had three and tomorrow I'll have the other three.
Next I'll try butterscotch swirled w/chocolate
And Vanilla swirled w/strawberry
and strawberry swirled w/blueberry
and chocolate swirled w/banana

I had made some last night and we ate them today and they were fine, not sure how long they would last for though, I suspect a couple of days sealed in an airtight container.

I made some last night and we ate them today, didn't even reheat them and they were still very good. This seems to be a very portable item and does not require refrigeration so it travel well for a good snack at work or something.

Vanilla coffe cake pudding cakes
 
1 packet Vanilla pudding
1/4 tsp baking powder
1/2 tsp cinnamon

2 egg whites
1 tsp vanilla
Instead of using 2 tbs cold water i boiled water then took 2 tbs added 2 tsp of instant coffee cooled it a bit then mixed it w/the egg whites and vanilla

baked in oven for 16 minutes at 350

I like the recipe better w/baking powder instead of baking soda it came out better!

I made a double batch of lemon mini-muffins and split them into 3 ziplock bags. A serving is 6-8 muffins and they stored well for 2 days. This is one of the few IP non-restricted items that you can grab and go. Or wolf down when you get home from work because you're starving and it's going to take over an hour to make dinner!

New cake recipe I tried today, yummy
 
Hi all,

I tried this today and it was the best yet:

2 oz water
1 tsp almond extract
1.5 tsp poppy seeds
vanilla pudding IP packet
1 egg white
baking soda
baking powder (1/4 to 1/2 of each one)
sweetner (xylitol I prefer, but you can use splenda too)

I baked for 20 min. at 350. They were really tasty!!

I used to eat almond poppy seed muffins a six pack at a time. This is such a fantastic find and truly so yummy I don't feel deprived!!!

Going to try these tonight! Thanks! Does the baking powder make it more "cakey"? I tried the baking soda and I felt like it ruined my cakes. I ate them anyway (guess they weren't that ruined :) ) but I like the consistancy better without the baking soda.

Jenny try the strawberry and add a little baking soda. To me it tasted almost like strawberry muffins... very good. I feel the soda made it more bready and less eggy

Thanks for the pudding cake recipes. My DH was missing his desserts so I made up 1 chocolate and 1 butterscotch batch of muffins. He really enjoyed them, he dipped his in the WF strawberry syrup. Next time I will add pumpkin pie spice to the butterscotch. Can't wait to get some poppy seeds so I can try them in the banana and the vanilla puddings.

Okay..does this recipe work for alternative products? like nashua and proti diet puddings??? Cause i tried making these cakes as perscribed and put them in the oven and they puffed up and then came out..and when they came out and i unwrapped them(used cupcake liners) I ended up with circular flat looking pancakes and not muffins at all..It was as if someome made an eggy yorkshire pudding that went completely flat and deflated....it was not cool!

Any thoughts???

thank you JD for starting this thread. I finally read it and promptly made a batch with blueberry pudding, YUMM. My only comment is it seems the sweetener in the packet seems to be toned down after cooking so I might add some splenda next time. Again thanks for getting me off my duff

I tried these today! Vanilla Pudding and Vanilla and Cinnamon! Turned out not to bad, kinda squishy in the middle, I made two cakes in pyrex 2 cup dishes and did them for 20 minutes.

Going to try and make 3 cupcakes tomorrow with Blueberry!

I tried these this morning in mini muffin cups. I don't think I cooked them long enough as we were running short on time. They looked beautiful cooking but fell really flat as soon as I pulled them out of the oven. The taste was really good, but the consistency reminded me of rice pudding...or something similar. Pretty egg-y. I drizzled some WF pancake syrup and enjoyed them, but hoping they will come out a bit better after I cook them longer next time. Thanks for sharing!

I tried the banana pudding mini muffins with some WF chocolate syrup. It was really yummy. Nice treat. Thanks for these wonderful ideas. We need more of them to keep us going!!!
