Thank you so much for this recipe!!! I just finished using the vanilla with poppy seeds for breakfast! So good! I was missing poppy seed muffins and this was just what I needed. Next I think Dark chocolate cinnamon.... yum.

How much zucchini do people put in their choc zucchini cake? Tried half cup grated zucchini and it was too much, next time I would do a 1/4 c and maybe pat it dry before baking with it as it was really wet...also, I would bake it for longer next time if putting zucchini in it.
Also has anyone tried keeping them for the next day?
I also would like to know if anyone has kept the muffins longer than a day...if so how do they taste? I was thinking of making a bunch so I could just grab and go?! Thanks!
I believe the way the recipe reads, that you don't follow the packet directions. You just add the dry to the egg and 2oz water and such that is listed.
Also, the location I go to allows for purchasing single packets so I think tomorrow (which I am not looking forward to cause home scale says another week of no movement) I will get banana, chocolate, strawberry and vanilla puddings and start experimenting. I will let people know how the turn out!

Ok, I tried it with the chocolate drink and they were pretty flat but otherwise good. Nashua has a variety pack of puddings I think I'm going to try it again with those. And their chocolate cake too. Mmmm cake.
Bickel- they are not exactly "cake" consistancy like you & I think of real cake. It doesn't sound like you did anything wrong. I have also found with the lemon I need to cook it a little bit longer, not sure why.
I have not added any sweeteners to them as they are sweet enough for me. One thing I have thought of is adding a little bit of fresh lemon juice to the lemon, but so far have not done it.
I tried these last night with chocolate pudding. Mine didn't turn out all that well... I beat the eggs until frothy, but not stiff. I'm thinking I'll try again and beat the eggs stiff, mix the water and vanilla into the pudding and mix it- and then fold the two together.
Any suggestions/input?

Movingon- you need to blend the eggs, water and vanilla together, not the eggs separately. Blend all liquid ingredients until frothy. Then pour mixture into bowl and gently fold in the pudding packet.
AprilH3- I wonder if a little bit of baking soda or baking powder mixed in with the chocolate drink would help this issue...
Redhead- do not make the pudding according to the packet instructions. Just follow the recipe as written.

Also, I bet the lemon with poppy seeds and a little lemon zest would be very close to a lemon poppy muffin. Or even the vanilla with poppy & lemon zest... I think I know what I am having tonight!
I think I'll try it again with a little baking powder. Maybe 1/2 a teaspoon? It's my last IP packet, might as well use it! I may just buy liquid egg whites, easier and feels less wasteful since there's not a lot to do with just yolks.
Vanilla pudding cakes are in the oven!!! Can't wait to try. The vanilla pudding tastes like cake batter to me anyway, so this just seemed natural! Picked up additional flavors of pudding today at weigh in to experiment.
