Depends on what your overall diet is and how you tolerate carbs.

Swapping brown or black/red for white is a great first step. Lots more fiber that way.

Default Substitute for Rice

Yes there is! I use cauliflour to make rice and you can also use that as a substitute for chicken. It's a great substitute and a good way to get some veggies in your system

Quinoa is a good substitute for rice. Nowadays cauliflower rice has become very popular as well.

Cauliflower is definitely a great alternative! If you don't want to make it homemade you can always go to the freezer section of stores and big bags of frozen cauliflower rice!
