I just discovered spaghetti squash! They are pale to bright yellow and you can find them in the produce section of almost any grocery store. They run about 4-5 pounds. Bring it home, stick it in a baking dish and bake it at 375 for 1 hour. Let it cool down about 15 minutes. Then cut it long ways. Scoop out the seeds (will look like the inside of a pumpkin) and then, with your fork, scrape along the inside to get the "meat" out. It'll come right out looking like spaghetti strings.

I will mix it up with spaghetti sauce or pesto. Or you can add a little olive oil and/or butter with parsley. And it really fills you up! Just buy one though as you'll be amazed how much "spaghetti" you get.

You'll find a lot of great recipes on the internet. I have had it 3 different ways all week and haven't grown bored yet.

You know what I have done? I have made a list of our favorite vegetables and fruit. I have also been meal planning religiously for the past 11 years. I have written an article about meal planning and created a really easy to use meal plan. I don't follow the plan in order - we eat what suits us from it on different days. I also like having my plan with me when I shop to match my groceries up with my meals. Having a plan also helps to be able to review the week in advance so that you don't have an overload of carbs, fat etc.

cucumbers tomatoes spaghetti squash chicken, brown rice, smart one desserts...leafted spinach, oatmeal, smart start cereal, light and fit yogurt (strawberry) frozen fruit...Broccoli,apples, bananas...3 healthy choice quick meals...wylers fruit punch( Looooove this stuff).

I just tried the healthy choce steam meal and it was pretty good, I love the skinny cow ice cream cones . . only 150 calories! also like slim a bear klondike sugarfree crunch bars (170 cal)

Even easier? Poke a few holes in it (about 20 times with a fork) and microwave for 10 minutes or until soft. let cool a bit then cut in half, scoop out the seeds and fork to enjoy!

(I always cut it first forgetting this method...so cut in half -which is soooo hard, scoop seeds, put face down in about 1/4 cup of water in a pyrex or the like and cover with saran wrap).
