Prep Time: 30 minutes (ready in 3 hours 30 minutes) - Yield: 9 (1 1/2-cup) servings


_ (16-ounce) package dried navy beans, sorted, rinsed
_ quarts (8 cups) water
_ (1/2 pound) ham shank
_ cup chopped onions
___ cup chopped fresh parsley
_ teaspoon salt
_ teaspoon dried basil leaves
___ teaspoon pepper
___ teaspoon nutmeg
___ teaspoon dried oregano leaves
_ garlic cloves, minced
_ bay leaf
_ cups thinly sliced carrots
_ cup chopped celery
___ cup mashed instant potato flakes


1. In Dutch oven, combine beans and about 6 cups water. Bring to a boil. Reduce heat to low; simmer uncovered for 2 minutes. Remove from heat. Cover; let stand 1 hour. Drain and discard water.

2. Add 2 quarts (8 cups) water, ham shank, onions, parsley, salt, basil, pepper, nutmeg, oregano, garlic and bay leaf to beans. Bring to a boil. Reduce heat; cover and simmer 1 1/2 hours or until beans are tender.

3. Remove from heat. Remove ham shank from soup. Cool slightly. Remove meat from bone; cut into bite-sized pieces. Return meat to soup. Add carrots, celery and potato flakes; mix well. Return to heat; cover and simmer an additional 20 to 30 minutes or until carrots and celery are crisp-tender. Remove bay leaf.

This soup is awesome, if you like this style. I actually use great northern beans and I add ham chunks along with the shank and also way more instant potato flakes to make it thick!

It sounds good, mine is similar except no potato flakes or nutmeg, and it is better the second day.

Sheesh! I have all the ingredients including a frozen ham shank. Now I need some fall weather. It's comfort food and I need some since my very sore leg has just been diagnosed as broken - after nearly three weeks of gimping around and being a crabby old lady, I went to the doc and then for an x-ray! Duh!

Ruth, sorry about your leg. Navy Bean soup is so easy to make and smells so good while it is cooking on the stove and tastes good in any weather.

The navy bean soup recipe is my favorite one, a few twists with the nutmeg....but as I mentioned I cut it in half. I add a lot more potato flakes too...at least 3 cups, maybe more, making it pretty thick. I start with 2 cups and then just keep adding until I get it right for me. I also usually add more carrots, celery and onion too.

Work at the pre-school today but not until later :)

Nice to watch my wife go off to work for her first day of school...on a Friday?...are you serious...one day back then a week-end off?....teachers have it made ;)

It was a stupid accident, Gary. (Are there any smart accidents?) I took out a floor vent to clean it, forgot it was out and stepped into the hole. Luckily my foot didn't go through the metal or I'd be crabbing about a cut ankle too. I was "lucky".

What are you doing at the pre-school?

RUTH, I was doing some drywall patching on our church pre-school...

got out of repainting it with the men's group since friends here...whew!!

Good morning. I am about to make a run to the bank with the loot from last night's fund-raising dinner at the Mill. I am so grateful for night depositories because I have way too much cash on my kitchen table.

Today's the day I test ten dogs for our pet therapy group. That's usually a fun time. Church first though - and that's usually a fun time too!

That sonds like a wonderful organization. I will be going to church too, we can wear grubbies today as we are having a work day around the church. We will have a potluck lunch first. I made a carrot cake. I origionally planned on bringing a salad but I am trying to use things that I have on hand.
