I'm working full time for the summer and haven't done such a great job of preparing good food for dinner for the family. So when I do, I tend to a little for myself. When I use leftovers to do it, I get bonus .
Tonight we had stir fry veggies--carrots, broccoli, water chestnut, edamame--w/ leftover steak bits over brown rice.
Tasty, economical and nutritious--the mom trifecta!!
Steamed broccoli with sauted garlic and onions with grilled chicken over whole wheat egg noodles. I drizzle a bit of olive oil over the finished product. My family LOVES it.
