I buy a Hawaiian marinade (bottled) that I use on my fish. I put the fish in a baking dish, then pour a small amount of the marinade over it and bake it.
We are getting some today and having it for dinner. My sister made it for us when we came to dinner and it was the best thing ever... and I hate fish. She just put a little pepper and covered it in lemon wedges for a while in the fridge... then broiled it (without the lemon wedges). Then she made little tiny dipping cups with a tablespoon of soy sauce and a tiny squirt (to taste) of Wasabi... it was incredible. You just dip the fish and it is a very liquidy dip so it doesn't weigh the fish down... just gives an incredible flavor.
Talipia is a good fish... I need to eat more than I do... The store here sells it in bags- but each piece is individually wrapped... makes life easy for a single person like me... and run some water over it and it's thawed in a flash...and to top it off, they often sell them buy one get one free!
One of my favorite ways to cook it is with baked cool ranch doritos... I buy them occasionally. Take some of the chips and crush them (This is a great way to use up those crumbs in the bottom of the bag or if they get stale)... dip the fish in an egg wash (beaten egg and milk) and then in the crumbs... and bake... Yummy!
Tilapia is sort of my default fish. I wish I could like salmon more, just seems too fishy for me.
Tonight I'm having tilapia, in fact. I get A Taste of Thai brand spicy peanut bake. It's sort of like Shake and Bake, but Thai style, and works well on fish. So I'm having that, some coconut ginger rice, and some grilled asparagus. Watermelon balls for dessert. Mmmm.
Here is a fantastic marinade that is low in calories and super easy to put together. It can be used with any kind of white fish, including tilapia, or salmon:
Indonesian-Style Marinade
1/4 cup soy sauce
1 tbsp white wine vinegar
1 tsp brown sugar
1 tsp ground ginger
1 tsp minced or crushed garlic (from a jar)
This makes enough marinade for 6 servings (about 30 oz of fish).
Nutrional Info Per Serving: 11 calories, 0g fat, 0mg cholesterol, 614mg sodium (use low sodium soy sauce to reduce the sodium), 1g carbs (1g sugar), 0g protein.
Marinate the fish for about 1/2 hour then broil, grill, or bake the fish. Brush more of the marinade over the fish as it is cooking.
Spray a plate with Pam, lay the fish on the plate and put a can of diced tomates (with seasoning if you like) cover.....microwave for 10 min. ..... it is so good....only way my dh will eat fish.
I cook them on a George Foreman grill (very small amount of cooking spray), when they are done, I drizzle them with a wisked together mix of olive oil, fresh lemon juice & fresh oregano. (heaven)
I serve it w/a salad made of diced tomatoes,blanched asparagus, olive oil & blue cheese sprinkles.
I don't measure anything, and I don't use much more than 2 tablespoons of olive oil (including what's in the salad).i
Husband & kids love it too. But wont eat either the fish or salad unless I serve them together?! I really think they complment eachother. Brown rice or couscous on the side also.
Super quick to make, less than 20mins for antire dinner
We love talapia in my house - even my picky, picky 14 year old loves it this way:
Place it in a baking pan, sprayed with a little Pam.
Sprinkle on it garlic powder, onion powder, salt, a little pepper.
Squeeze some fresh lemon juice over it.
I soften a tiny bit of butter, maybe 1/4 tsp. per fillet, and mix that with some flavored corn flake crumbs. I then sprinkle that over the fillets. It comes out so good with a nice crunchy topping.
Bake at 350 deg. for about 30 mins.
