Default Yummy Brown Rice Salad

This has become a weekly standard for my lunch. so I figured I'd share. It's so good:

3/4 c. Cooked brown rice
1/2 c. chopped cooked chicken breast
1/2 red pepper (finely diced)
1 stalk celery (finely chopped)
3-4 green onions (finely chopped)
1/2 green apple (finely diced)
1/4 c. chopped walnuts
juice from 1/2 lemon
1/4 c. apple cider vinegar
3 T. olive oil
salt & pepper to taste

Mix it all up and enjoy. For best results, I've found that if it sits for over an hour, the flavors really meld together.

It's so nutty and filling. You get your fiber, protien, veggies, and fruit in one super yummy salad!

This is quite delicious. I made it this afternoon, with a couple of variations: I added raisins, I used a red apple (Pink Lady), and a tad of mayonnaise so my husband will eat it. It was a little vinegar-y for my taste, so the mayo cut that a bit. Thanks so much!!!

Wow! Someone's already tried it!!! I'm glad you liked it. I'm glad you were able to tweek it to your liking. I know when I make it, I don't actually measure what I put it, so maybe the vinegar measurement is too much....you all might want to start with 2 T. and go up from there. Lemme know what you all think!

I love recipes like this where you don't have to measure and you just throw in what you have in the refrigerator. Brown rice is a good starting point. Then you can add leftover fish, chicken, or no meat at all, any leftover veggies or steam up a variety -- carrots, squash, broccoli, add some red or green pepper, any kind of onions, some chopped spinach. The other nice thing is you can eat it hot or cold, by itself or in a wrap! Make a big bowl on Sunday and you've got several days of lunch, like you said. Thanks again!

Cool, although I don't know about the walnuts. I've never enjoyed cooking walnuts before they always taste funny
